  • no more excuses on vacation!!!

It is not impossible to do induction on vacation...I have had several meals so far this trip that were very induction friendly!!!....Most hotels have a microwave and a frig....that is all you need to make a wonderfu in room breakfast!...cheaper than going out and IMHO better for you!...I personally am a dinner freak and love to have my most spendy and wonderful meal late in the evening when the day is done and I can sit and enjoy the whole presentation, conversation and flavors....the other meals must be good but I put the main emphasis and $$$ on dinner....so for breakfast I make this version of Eggs Saratoga ....
I always travel with a kit that takes up very little room in my backpack...it includes kosher salt and a pepper mill, a handful of plastic ware, some good disposable bowls (like chinette I hate styrafoam)...little packets of mayo wasabi, cream cheese and other little condiments we like...my own coffee (I am spoiled living in the NW!!) and coffee filters...(they make great holders for snacks as well as they never have them in the rooms just those packets of disgusting coffee in a bag)..a few dried herbs (legal ones only thanks :yes ...).and napkins...so all I have to pick up are the eggs and maybe some local fresh produce or cheese....

Creamy Saratoga Eggs for on ala' the hotel Room

    3 eggs beaten
1/2 of those tiny packets of cream cheese that people get with bagels
    dried or chopped fresh chives
    salt and pepper

put the eggs in bowl and beat them up a bit...with the chives and pepper then nuke 'em for a minute on high...mix them up well and nuke them again (most microwaves take about 2 min total for three eggs but check often and see what it looks like)...then take them out put the cream cheese on top with some pepper and chives cover with something and let them sit a minute ..salt if you like and YUM!....cost about 50 cents!!!....if that!!! eggs are so cheap most places!...

    WooHoo nurselady!

Way back when I joined the board, one of the mods had a saying "Failing to prepare is preparing to fail".

When I go on day trips I pack a kit of snack food (just in case I don't want to spend $10. 00 on a chef's salad). Usually it's a foil packet of tuna, a packet or two of mayo, and some phase appropriate veggies. And of course, water.

We usually have a hotel room with a microwave in it. I now always bring pre-mixed flax cereal with me (flax meal, wheat bran, cinnamon, pinch of salt, splenda), and a bowl (though you can use a styrofoam cup if you're desperate!). I just mix in some water and nuke it...instant breakfast

I've been on two two-week vacations since starting Atkins -- and never cheated either time. If you're prepared and you refuse to make excuses, it can be done!

good for you Nurselady you know we used to have a stickie for all those who went on vacation and didn't vacation from their Atkins WOE to tell how they did it maybe it is time to bring that back. I know many folk who read it said the ones about the place they were going like camping or Disney land were very helpful.

Oh moderators can we have a stayed on plan on vaction reporting in stickie topic again???? Maybe an on Atkins vacation channel but not in the chit chat as it will not be off topic LOL

I think a Vacation Menu thread can be filed away in the Low Carb Menu forum http://www.atkinsdietbulletinboard.c...forum.php?f=70

I would title the thread "Vacation: Disneyland" or "Vacation: Las Vegas" or "Road Trip: New England" or "Road Trip: NJ Turnpike" or something like that so folks will know what the thread is talking about.

sample menu from a day in Florida
            breakfast
eggs in the microwave with cream cheese as mentioned above

Lunch a produce stand bonanza tailgate!
            Lettuce roll ups
            beautiful avocados sliced
romaine lettuce rinced with bottled water dried and piled the leaves
            vine ripe tomatoes sliced
            local cheeses sliced...
            salt and fresh cracked pepper

            Dinner
Seafood stew done at my folks took about 30 min to make
            it is like ciopino (sp?)
a soup made with tomatoes, dry white wine, sweet onions, lots of local seafood, saffron, scotch bonnet peppers and a Knorr fish cube salt and cracked pepper served in a great big bowl....

I am not seeing deprivation here at all are you????...and induction friendly as far as I can see..(if you skip the wine in the stew) .the cube may have had hidden sugars but I only used one for 6 servings so I am not even stressing on that one!!!...and a can of anchovies could have easily been added (come to think of it I think I did put one in) ....

Re: no more excuses on vacation!!!

Any ideas for vacationing overseas? I'm going to be in Spain for 10 days and I'm not sure what kinds of foods will be available, etc. I am thinking of buying some Morning Start bars to take with me for breakfast (I've never had them before, but I can't think of any other great options). Don't know what will be available for lunch and dinner!
