I'm sure this has been asked before, but it is xanthan gum needed to thicken sauces? I am going to re-start Atkins this coming Monday, and am curious if I need to buy it.
You can also thicken sauces by cooking down veggies and putting them in your sauce... onions, celery.
I like xanthan gum in some things (sloppy joes are good with it). But in some recipes I think it tends to make things slimey if you use too much. It just takes a tiny bit. A small bag of it will last forever!

I second the Thicken and thin..it works great and doesn't add any funky flavors. Kind of expensive, 19.99 plus shipping, but the bag will last a long time.
