I bought some very nice rhubarb yesterday. I remember MoG saying she used to eat rhubarb raw, dipped in salt, when she was a kid. So I'm going to chop some of it and add it to coleslaw. I'll tell you how it turns out.

I made the slaw: I shredded the rhubarb using a mandolin thingy. Anyhow, I did a traditional mayonnaise coleslaw recipe. It's not bad! The tartness of the rhubarb gives it a little 'zing' . When I make a mayo coleslaw, I usually add a few tablespoons of vinegar or lemon juice, but I omitted it this time. Oh yeah, I used about 4 cups shredded cabbage and about 1/2 cup of the shredded rhubarb (so I still have a bit of rhubarb left!)
The slaw looks a little pinkish, but I don't mind it too much. Maybe I'll add paper thin slices to a radish salad I make: it's just thinly sliced radishes, thinly sliced onion, mixed with equal parts mayo and sour cream, and fresh ground black pepper.~Megs~

I LOVE rhubarb! and it's a legal veggie even in induction, it was one of the ways i got my veggies in..amost feels like a cheat to me!
I posted this drink recipe for rhubarb lemonade a while back that sounds really good..i haven't tried it, but plan too if and when warmer lemonade weather ever gets here!

That is good! I used a rhubarb sauce as a stand-in for cranberry sauce during my first Atkins Thanksgiving (wasn't anywhere near the berry rung at that time.) It was very, very good and I didn't miss the cranberries at all.Originally posted by sadie147I

I was looking through an old British cookbook and there was a recipe for a rhubarb fool: cooled rhubarb sauce mixed into whipped heavy cream. That sounded good.~Megs~

Did another thing with rhubarb:
I made a basic sauce by simmering chopped rhubarb with alittle water and sweetener. I cooled it. Then I tossed about a cup of it into the blender, pureed it until it was very smooth. Added about 4 cups of water and made it into a drink. It's good--tart like lemonade.
It was better when I put ice cubes and added club soda to it. And it was even better when I added a shot of vodka to that.
Here's some other rhubarb recipes. A few recipes use rhubarb in meat stews---sounds interesting, imo.

It is so addictive!
I have eaten about 6 sticks of stewed rhubarb today - and added heavy cream to it - so yummy and I so went over my carb allowance.! promise not to have any for a couple of weeks now!

I bought extra rhubarb, sliced it and froze it so I have some for later on.
Try the rhubarb sauce as sauce for chicken or pork---you'll be hooked!~Megs~
