Atkins on a budget

    Ok check this out....I made a small nutritious version pumpkin cheesecake that I love for breakfast
    1 can pumpkin .94
    1 12 oz package of cream cheese 1.50
    4 eggs .90
    my own mix of sweet spices perhaps .04 worth!
    1 tb of ground dulse (instead of salt it adds extra vits and fiber)
    (I do not use sweetener but you could)


    1/4 of this recipe made breakfast my total cost with a cup of coffee and some cream less than 1.50!
    about 1.50!
    (12 carbs and 4 grams fiber)



    lunch
    2 scrambled eggs with 1 oz smoked cheddar and half a tomato

    total cost .98 with coffee probably 1.25
    7 more carbs one more fiber

    dinner

    chicken breast stir fry with mushrooms and onions
    1.00 for the breast and the shrooms onions and parmesan cheese all come in to less than 1.00 with the half cup allotment

    dinner 2.00

    water is free but count another 1.50 for my Perrier treat!.....

    total cost for a day on Induction
    6.25!!!!
    total carbs 24
    grams of fiber 6
    satisfaction 100%!!!

      Lynne in sanswer to your question we can set a limit or just post our menus and how much they cost us..it will vary regionally and my budget is lower because I can buy some stuff on base...but as most of us who have that option know you can find better sales as well...we can do this anyway ...any one wants to I just had the idea because so many folks have said that "this is expensive" and to be honest when someone buys a bagel and coffee for $6 each morning compared to my whole day of eating for a fraction more...we need to share our knowledge so money is not the issue!!!....

          Eating cheaply on Atkins just takes a bit of work.
          Breakfast Scrambled eggs with a half bunch of spinach, garnished with paremesan.
          Lunch. Tuna Salad. I make it with hard boiled eggs, celery, cherry tomato halfs, lettuce and mayo and a can of black olives. It is usually enough for 4 lunches.
          Dinner. Hamburger with grilled onion slice and mushrooms.

          Last night I made this delicious cauliflower soup. I roasted a head of garlic, and cooked 4 packages of frozen cauliflower (.99 each) in a quart of chicken broth and cooked it until soft. Added 1/2 cup of cream, the roasted garlic ,nutmeg, salt and pepper to taste and whirled it together. My husband and I ate it, we will both have it for lunch and there will be enough for lunch tomorrow. I could have used fresh cauliflower but they are 2.00 each so I went for the frozen. I think the fresh would have been a more intense cauliflower taste, but this was good.

              My day today costwise:

              Breakfast-
              1/2 a can of chicken broth with seasonings (not counting the seasonings because I would have them on hand anyway) $0.39 (79cents divided by two)
              1 scrambled egg $0.20
              Total - $0.59

              Lunch-
              1/2 cup lettuce $0.44 (pre-bagged stuff.. 2 cups to a bag $1.79 a bag)
              1/4 of a small can of diced tomatos $0.24 ($0.99 divided by 4)
              1 hardboiled egg $0.20
              Total - $0.88

              Dinner (will be)-
              1 veggie burger $0.74 (4 to a box at $2.99 a box)
              1 cup mixed salad greens $1.49 (pre-bagged stuff 2 cups to a bag $2.99 a bag)
              1/4 of a small can of tomatos $0.24
              1.5 cups broccoli and cauliflower mix $1.32 (2 cups to a bag $1.99 a bag for frozen)
              Total- $3.79

              Today's total - $5.26 (wasn't feeling good today so maybe tomorrow I'll have a better menu)
              Female/32/Still too big, but getting smaller..

                Awesome Oragam!...this is actually kind of fun if I keep on track here I can buy my new front door...counting cost is more fun than I thought !!!....

                    It's kind of like egg drop soup. Except I scramble the egg before I put it in the broth?

                    You bring the broth to a boil in a pot while you're scrambling the egg, toss in whatever seasonings you like, I add cajun or season pepper usually to give it a bit of taste. Toss in the egg and let simmer for about 2-3 minutes. Makes a good soup when you're not feeling so hot.

                    Eggdrop soup is pretty much the same except you don't scramble the egg.. bring the broth to a boil, turn the heat down to medium and you drizzle the egg in on the back of a spoon so it makes long noodles and simmer for about 8-9 minutes. I add a little bit of seasoned vinegar and green onions when I make egg droup soup.

                    Easy and yummy.

                        Ooh, that would have been nice when I was sick, or those days when solid food just doesn't suit me

                        And nurselady, I am shopping for a new fornt door and back door too!!! I should start a fund, putting all the money we save on fast food, in a jar...

                          actually it is going to be wood yes!!! and it will have a lot of glass so you can see right into our entryway!...where I live this is not an issue and the glass seems about as easy to kick in as the door anyway!!!...I am going to have glass side panels as well ...my son has a side job with a home improvements business so I am hoping he will afford his mother a discount

                            Oooh.. that sounds like it's going to be pretty! I'm paranoid about glass side panels.. maybe it's the fact I watch to many horror movies or something but I'm always afraid that someone will be watching me through them or that some killer clown will come through them when I go to see who's at the door! :yikes

                            Are you going to have plain glass or colored glass at the top? I've always been partial to stain glass designs on doors! :yes

                              I think I am going with clear glass I was going for the stained but to get some really nice stuff it is $$$$ so the I thought lead etched glass..but EVERYONE has lead etched glass now...then I visited my folks and they had a huge wood door with clear glass and it was so awesome letting light in (we need that!) that I made the choice right then and there...we have a brick house and the color actually will match the grout..I wanted like cobalt blue but there was a coo ..an uprising NO COBALT blue with brick...so I am going to go with this slatey blue (boring!) but since the door is mostly glass what the heck...I know I watched some of those horror movies and thought at first ...is this safe...but it is and the entry way is not directly into our home... boy did we get off topic..but it is all about the budget and I am doing this for cheap to get a door so what the heck!!!.....

                                I think if you look at how much money a person tends to save in medications they no longer have to take because of Atkins and weight loss, they save a lot! I was taking in excess of $100 a month in meds WITH insurance!

                                My family eats everything I do (and then some), so I think it's not any more expensive to do Atkins than to NOT, save for the fact we eat more fresh veggies now than we ever did!

                                So, if you take my saving over $100 a month in meds coupled with just food shopping for my family, it really isn't any more expensive doing Atkins.
