  • Stuffed Portabella Mushrooms (Induction friendly and VERY veggie challenge friendly)

    I made these for dinner tonight and they were soooo good, I thought I would share

    I weigh everything and plug it into this new software I got, so I will have to approximate some measures

    2 Portabella Mushrooms (120 grams ea, approx 2 ounces each)
    28 grams green bell pepper, chopped (2-3 tablespoons)
    28 grams red bell pepper, chopped (2-3 tablespoons)
    18 gram green onion, chopped (1/4 cup)
    1 clove of garlic, minced (3 grams)
    3 ounces shredded cheddar cheese (3/4 cup)
    1/3 cup crushed pork rinds
    1 egg
    1 strip of thick bacon, cooked and diced

    Remove stem & gills from mushrooms, pitch gills and mix stems with peppers, garlic and onion. Saute veggies briefly (I used bacon grease, just a little bit, but you could use olive oil, butter etc.) Put veggies aside, to cool.

    Whip egg until foamy, add crushed pork rinds, seasonings & bacon (I just used a dash of onion powder, but basil, oregano...whatever you like would be good also) and mix well, then stir in veggies and 1/2 cup of the cheese.

    Fill portabellas, place in a baking dish sprayed with pam and bake at 350 degrees for about 20 minutes.

    Remove bellas from oven, sprinkle with the remaining 1/4 cup cheese and return to oven for about 3 minutes.

    5.2 net carbs per bella.

    And the best part is, well besides the fact that they taste wonderful, almost all those carbs are from the 'salad veggie list'!

    Sounds yummy! I'll have to try it after the Challenge. (Got my menu and grocery list worked out so it'll have to wait... )
