Heavy cream is lower in carbs and the naturally occurring sugar (lactose) than other liquid dairy forms like half n half, whole milk, 2% milk etc. The lower the fat, the higher the carbs.
You asked if in a pinch, would it do. I say in a pinch, yes. As a rule, No.
The inductions rule says heavy/whipping cream.~Joy
