  • Garlic, What's the deal?

    OK, looked at the book and it says that garlic is allowed as acceptable food under herbs. It is also highlighted as "in a class by itself" on the Atkins Ratio regarding antioxidants. However in the carb counter it says 1g of carbs per clove. This seems a lot, when it is considered a free herb.

    What is the true cost to our carb count?
    Any Ideas?

    1 carb per clove buddy. That's how we all count it!

      Yep, 1 carb a clove. Becareful when using prepared minced garlic, because you don't realize how much you really use.

        If you sautè it in oil and then remove it gives a great garlic taste... like if you toss veggies in garlic, oil and chili... that way you don't get the carbs, just the taste.

          Yeah, we just used the one clove as we were scared of the carb count. I suppose the other way to do it would be slice it large enough so you can see it and leave it at the side of your plate. We did that with ginger in our beef stir fry with broccoli last night.
          Thanks for clearing that up, it's just a shame that we can't eat much of it.

            I still think that there is a lot worse stuff you could be using you know!! I found some garlic oil awhile back, but can't remember where?? Also, try this, in a small container with olive oil, stuff in about three cloves, maybe split them so the flavor gets out, and wa la - garlic infused oil, it'll give you more garlic flavor at least....along with cooking with the real stuff...

              In my sometimes humble opinion, I just can't get too spun up about 1 carb per clove........nope, I just can't go there. I love garlic, always have - but I don't blame my body shape on garlic.
