  • Yam noodles

    Hi,

    I know that Shiritaki Noodles contain 0 net carbs, but does anyone know if dried Yam noodles are the same? They're effectively made from the same ingredients, just pure Sweet Potato starch.

    Can anyone help?

    Really? I thought shiritaki noodles were almost pure fibre.

      Shiritake noodles, if they are REAL shiritake noodles, are made from glucomannan, or yam flour. This is a fibrous flour and the noodles are COMPLETELY fiber. There are some versions that are made with tofu and glucomannan, but even those are mostly fiber, with some added protein.

      Dried yam noodles are possibly something different, if they are made from sweet potatoes...stay away from those, stick with shiritake.

            good question kiss...let me know if you find out! they are tofu and whatever rung that is on..have you ever had tofu? i have no idea what that even taste like

              tofu is in the legume rung because it's made from soybeans. Tofu has really no taste, but it takes on the flavors of whatever it is cooked with. I own 2 cookbooks devoted only to tofu. I'll bring them sometime so we can look.

                  I figured i'd take a look at these seeing as im at the legumes rung in a coupla weeks...

                  The only thing i can find is to buy them online and it says....

                  Shirataki (Yam Noodles). Most commonly used in the Japanese dish - Sukiyaki - a stew with beef & vegetables. Very low fat & low carbohydrate.
                  Net weight : 200g

                  but i can find no nutritional info on the website?

                  Are these the right thing?
                  what do they taste like?

                    Shiritake noodles are made from yam flour, and are completely fiber. They have no calories and no net carbs. I would assume that they are acceptable for all phases of Atkins, but you might want to ask a "pro" about this. They are chewy and take on the flavor of whatever you cook them with.

                    There are two types--noodles that are just yam flour, and others that are a yam flour/tofu mix. I've never had the tofu ones, but they have more calories because of the added protein.

                    Although it is made from soybeans, tofu is acceptable for all phases of Atkins, as it is considered a soy "cheese".

                        OOOOOOOH one more thing--shiritake noodles have a VERY fishy odor when you take them out of the package. The best way to get rid of this is to rinse them and boil them. Boiling won't cook them and the texture won't change.

                        I've eaten them like spaghetti and mixed them with tomato sauce and mozzarella. I might be bold and daring and try them like alfredo, too. I'm also thinking that they'd be awesome cut up into smaller noodles (each noodle is about 2 feet long and very stretchy!) and put into chicken "noodle" soup or egg drop soup. YUM!
