  • Going Camping...need Menu!

    Hey everybody!!

    My family and I will be going camping in a couple of weeks and I have a 'little' problem.....
    what am i going to eat!!!
    I don't know what to do about my veggies...we are only going to have a cooler...lettuce doesn't exactly keep in a cooler...campfire cooking? could get difficult...
    we typicallly (old lifestyle) have baked potatoes with several meals...
    help..what am i going to eat!!

    any suggestions are greatly welcomed!~!!!

    It never ceases to amaze me of how easy and how effective this ***diet*** is!!




    I have since re-gained a bit of weight, but that is soon to be coming off again!

        I will move it and then give you some ideas..... lol

        Put your vegetables already prepared in a bag with some ice packs around it. I dont know if it will work, but its a suggestion.

          I would take some Yellow Squash...onions...peppers with you.. they do not have to be in a cooler.. Cut them fresh that day.. I am assuming you are going to cook on a grill..

            Lo carb easy when camping I do it all the time. I have never had trouble with my salad in a zipperbag in the ice chest. My problem was keeping kids from eating it all.
            Here is my list of things to take.
            1. Lots of hard boiled eggs to snack on and for quickie breakfast
            2.Peanuts (if that rung)
            3.All meat hot dogs (buns for dh and kids non for me)
            4.Pencil sausage - same as above
            5.pepperoni and cubed cheese in zippered baggies
            6. Vegis I like raw : cukes,peppers,celery
            7.I would suggest beef jerky if you like it just watch the package
            Make sure you take enough fresh water, have a great time.

              I'll assume you're taking mayonnaise...sooo you could make a "spread" using canned tuna or chicken.

              Anything canned, like:
              Olives
              Green Beans
              Artichokes hearts

              And like Sandy said, root veggies that don't need to be refrigerated would be great choices. If everyone else is having baked potatoes, you could "bake" a turnip until tender and then add the "fixings", yum!

              You could make a batch of revolutionary rolls...I love those things and they keep well in a big zip bag. And they're great for burgers or that all-beef hotdog!

                Baked turnip...now how does that taste??? Never considered it!!

                  Okay, I'll give you the lo down on what helped me 3 weekends ago, but you'll have to do some fancy precooking ahead of time and be prepared to enjoy a wonderful time with your family! Oh, and I'm too lazy to get the thread links, so you'll have to do a little work finding those too...ain't I a stinker?

                  Anyhoo...

                  Okay, so make you up a batch (or even 2) of those little darling Atkins Revolutionary Rolls. Stick them in a ziploc bag and keep the air inside the bag so they don't squish while you're traveling.....make egg sandwiches for breakfast in the morning, or even lunch meat "sandwiches" in the afternoon or for dinner.

                  Boil up some eggs, or take a carton of the faux egg stuff (egg whites) because they travel better. You're choice. Or take both!

                  Get some lunch meat, but avoid highly salty foods. You're already in the great outdoors that requires more water during the day, so why add more salt to your diet?

                  If you're passed Induction, sorry, I didn't read that part yet, take some seeds with you to snack on or put on a nice green leafy salad.

                  If you can't make those rolls, take some large leaf green lettuce to make "sandwiches" with those.

                  If you're hankering for something crunchy and feel like you NEED salt, grab some pork rinds, salsa, sour cream and enjoy!

                  Precook some chicken for chicken fajita's or even shredd up the chicken to make chicken salad.

                  Hey, take a some steaks, mushrooms, peppers, and onions to enjoy over a nice fire or cook over your stove.

                  Take some cream cheese, or better yet, try Laughing Cow. It's swiss and comes in individual pieces in a round card board box. Perfect for traveling!

                  Tuna in those packs are great too. Just open them up add mayo and whatever to it directly in the package and "stir". I think there's a chicken one too, but I recall it's really salty.

                  Think you can't live without smores and those things that your family USUALLY have while camping, think again. Mix up some splenda, cream cheese, and cinnamon to "dip" pork rinds, or even put some cocoa powder and splenda in a ziploc bag with pork rinds and shake shake shake. Perfect for campfire snacks. You can even exchange the cinnamon for the cocoa, too!

                  Grilling any meat is great, and having veggies such as cherry tomatoes, celery sticks, olives, cheese chunks, and anything that's on the list of veggies are all perfect for survivial food.

                  And most of all, water. Just when you think you have enough, bring more.

                  Hope that helps...a little!

                    Oh oh oh....and I forgot!

                    I bought a package of Rynolds wrap individual alluminum foil pieces (only because it was an impulse by at the checkout line at Walmart. Hey, for a $1 I'm a sucker for good things!) and cooked turkey burgers w/mushrooms in a little real butter and dash of garlic powder. Oh, it was good! We cooked them over the fire pit, which was even better in my opinion
