  • Food Idea

    Hi Everyone.. We are having a picnic on Sunday after church with the youth.. They are providing fried chicken and we are suppose to bring something.. Well of course it will be something I can have...

    I can't think of anything besides Salad, or Deviled Eggs or a Broccoli Salad (I don't think the kids would eat it)

    Any suggestions?

    Maybe some celery sticks filled with cream cheese? A lot of kids like those.

    Or some sour cream and chive dip with sliced veggies on the side.

    Cole slaw can be pretty low in carbs if you make it yourself, personally i love the deviled eggs, though!!

      Thanks.. I didn't even think of coleslaw and I have made it low carb before... I might check out Linda's site and see if I can fix something hot in the crockpot..I only live like a mile from church and could run home and get it..

        when we have cookouts, I will marinate all the veggies in oil and vinegar, celery, mushrooms, olives, cucumber, bell peppers, etc......then when add the pasta---I leave out a serving for me on the side.

          I love to take a potato salad recipe, and use cauliflower instead of potatos, it normally gets rave reviews! I don't have exact measurements, but it includes


          Dressing: about a cup to 1.5 cups mayo, 1/2 cup sour cream, a bit of splenda, to taste. dijon mustard and salt and pepper sometimes i add onion powder and garlic powder. you could use any dressing recipe just watch for added sugars ie: miracle whip.

          cut cauliflower into 1" pieces and boil until tender. Drain well VERY well..I usually leave it inthe colander for a coupel of hours, and press down on it every once in a while (or your dressing will go runny).

          Add chopped boiled eggs, chopped green onion and diced celery and radish. toss it all toghether and refrigerate, tastes best the next day.

            mmmmmmmmmm poppers! Although I doubt the little ones would like the hot stuff, the adults I serve them to love them. Broccoli salad is one of my fav's as well. You can always make like a low carb chili, chicken wings, Fresh veggies and dip, stuffed cherry tomatoes, Prosciutto and Cheese Wrapped Asparagus, crock pot meatballs with different sauces, Linda has a really good lasagna recipe, crab stuffed mushrooms, hot (crock pot) artichoke/spinach dip and serve with veggies to dip with, or even a cold spinach dip. You can always do a plate of like pepperoni/salami with cheese, olives, pepercinis and such. Cucumber salad with cucumbers, tomatoes, red onion with Italian dressing as a slight marinade. There are some AWSOME recipes that were listed in the salad threads with and without lettuce that you might want to take a look at.

            I hope this gives you some good ideas and hope that you have a fantastic time!

              Thanks everyone.. I am leaning towards the Broccoli Salad..that is my favorite..and I almost don't care if anyone eats it then I will have leftovers..lol I wanted something that was going to be filling for me...lol

                Sandy, have you tried Faux Potato Salad, it rocks!! It's soooooo good!!

                You basically just cook the cauliflower until fork tender, cut it up into small chunks, instead of relish I add a dill pickle or two, just add everything you would as regular potato salad (haha no potatoes.....haha)

                My family and friends ate it and didn't even know it was Cauliflower until they saw me eating it! Now.....my wife and son want it more that regular Potato Salad, it's a great picnic'y food!!
