  • Almond Meal

    Hi there! I found a recepie here that someone posted for Almond Snickerdoodles. Sounds delicous! However, I don't know where to buy it. Does anyone know? I didn't see it at Safeway. I'm wondering if Wal-Mart or Albertoson's carries it.

    Also, what other products can I use to substitute flour?

    O.k. besides the almond meal question I totally forgot something else. I have been meaning to ask the experts. When you measure a cup of lettuce which equals to 8 oz, do you cut it first then meaure it in a measuring cup or can you just cut it and put it on the food scale? Somehow, 8 oz of lettuce on my scale is way more than 8 oz cut up and made to fit in a measuring cup.

    Which is the correct way to measure it. Please, please let me know cuz I might be doing it wrong all this time. Thanks.

      I think Trader Joe's sells almond meal; also try health food stores, such as Whole Foods.

        I make my own almond meal--I grind whole almonds in a coffee grinder. It's MUCH cheaper than buying almond meal or flour pre-ground!

        Here are some ideas for flour substitutes, and the appropriate rung on which they fall:

        Induction: Pork Rinds
        Rung 2: Parmesan cheese (breading for chicken, etc.)
        Rung 3: Flax meal, Coconut meal/flour, Almond meal/flour
        Rung 6: Soy flour, chickpea flour
        Rung 8: Potato flour, sweet potato flour
        Rung 9: Corn meal/flour, wheat flour, oat flour, quinoa flour

        I'm sure I've forgotten many, but my brain is fried!

        As for the lettuce, I eat everything out of those salad mixes. I check the servings per bag as well as serving size, and divide the lettuce that way. Usually there are 4-5 cups per bag. I can now pull out a handful of lettuce and know if it's a "cup" or not. I haven't ever weighed my lettuce, but if you weigh it, weigh it in grams, not ounces. There is a site that gives you food weights and measures and I'll be darned if I can remember it...

        ...hopefully someone will come along to help!

          a cup of fluid is 8 ounces
          a cup of lettuce does not necessarily weigh 8 ounces.

          Here's a better example:

          A cup full of cotton balls does NOT weigh the same as a cup full of quarters. A cup of quarters is far far far more weight than 8 ounces.

          So, measure by chopping up your lettuce and putting it in a measuring cup.

            Wow Julie you not only answered two questions but went above and beyond giving me all the substitutes and at the different rungs.

            That's greatly appreciated. I'll print that out too and keep it in my recepie box. It will come in handy once I get there. Thanks a bunch!

            Joy, thanks for clearing my doubts about measuring the lettuce. That's what I thought all along. Luckily I only weighed it in ounces 1 day. I ended up eating a huge portion of lettuce hoping that it was just 1 cup.........LOL!! The funny think is that while I was eating it I kinda knew I was doing something wrong, but I still ate it.
