  • Jicama "tortillas"

    Emeril's show tonight was low-carb cooking. He had a great alternative to tortillas. He took a large jicama, peeled it and made very thin slices. He used the jicama slice for some tuna tacos he made. I thought this was a great idea for those who can find jicama in the grocery store.

    I haven't seen jicama in my markets for a long time. But it's something I'll keep in mind.

      Thats not a bad idea, cutting it tortilla thin would be hard, but I could see it being as a roll up for tuna salad, egg salad, hummm. The list could go on and on

        ROFL The jicama at our groceries rigth now are smaller than onions. It'd be like baby tortillas Just a funny image...

          great idea our jicama is wonderful here right now big and sweet!!...I have made "crackers" and topped with cheese or whatever...but a tortilla that sounds great ...glad you posted this!!!.....it works ethnic wise!!!...

            IIRC Jicama is an autumn veggie, so perhaps it is not in season at the moment.

              For a while we couldn't get it much, but they seem to be coming back recently. The other day I went to several stores on a jicama hunt and finally had success!
