  • Fiesta Theme Food

    On the 24th of June our church is having a Potluck dinner and the Theme is Fiesta. I am racking my brain trying to figure out something I could take..

    I have an hour to drive to get there...and then we would be in church for 2 hours so I was thinking.. Is there something I could fix in my crockpot..

    I am thinking maybe I could just fix some Taco Meat and take the fixings...Then I know I have something to eat... If I do Taco's..I could just have it ready and reheat the meat before we go out to the park for Lunch...

    Anyone have any other suggestions?

    Thats a good plan, you can take taco shells for everyone else and those cheese ones for you! have you tried them?? theyre very good!!

      This is one of my favorite dishes.

      GREEN "ENCHILADA" CHICKEN CASSEROLE
      4 cups cubed cooked chicken or turkey
      2 teaspoons Seasoning for Tacos
      8 ounces cream cheese
      1 tablespoon minced chives, optional
      7 ounce can Green Mexican Salsa
      4 ounce can chopped green chiles
      6 ounces Monterey jack cheese, shredded
      4 green onions, chopped Grease an 11x7" baking pan. Put the chicken in the pan and toss with taco seasoning to coat. Soften the cream cheese and whisk well with the chives and green sauce in a medium bowl. Stir in the chiles. Pour the sauce evenly over chicken. You can mix it in if you like, but it's not necessary. Top with the cheese. Bake at 350º 25 minutes, until hot and bubbly. Remove from the oven and immediately sprinkle with the green onions.

        I tried them once before and couldn't get them to work.. But I took them and broke them up and had a crunchy taco Salad... But thats a good idea to do that way I won't feel deprived.. I think I am going to have Taco's for dinner tonight..lol

              Sounds like fun! Here's one of my favorites.

              I have doubled the chili amount sometimes, and it tastes fantastic if made the day before.

              CHILE RELLENO CASSEROLE
              2 7-ounce cans whole green chiles, drained well *
              8 ounces pepper-jack cheese, shredded
              3 eggs
              3/4 cup heavy cream
              1/2 teaspoon salt
              4 ounces cheddar cheese, shredded

              Grease an 8x8 inch baking pan. Slice each chile along one long side and open flat. Arrange half the chiles in the bottom of the baking pan, skin side down, in a single layer. Top with pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up. Beat eggs, cream and salt well. Pour evenly over chiles. Top with cheddar cheese. Bake at 350º for 35 minutes, until golden brown. Let stand 10 minutes before cutting.

              Makes 6-9 servings
              Can be frozen

              * You can also use your own home-roasted green chiles. Click here to find out how to roast them. You'll need about 8-10 Anaheim or New Mexico chiles depending on the size.
