  • Casserole Recipe Wanted

    Ok, I just finished a big pot of cauliflower soup. Now I need a recipe for a casserole. You all did such a good job coming up with the dip thing and by the way it was a hit at the party. I didn't even mention it was low carb.
    But back to my casserole, I need some comfort food if you could make it induction friendly, I would appreciate it cause I am re-inducting this week.

    Hi Lynne:

    I've got two casserole recipes in the recipe section. Here's a link to the Spaghetti Squash casserole:



    It calls for a special cheese but grated cheddar or your favorite cheese(s) will do fine. I've made it several times, adding in canned (drained) tuna or chunks of cooked chicken and brocolli and it's WONDERFUL.

    The other great casserole recipe is my Mexican Casserole. 100% Induction friendly, tastes amazingly good, and non-low carbers love it as well. I serve it with a bit of diced tomato, shredded lettuce, black olives and a dab of sour cream on top! I didn't check to make sure it's still in the recipe section -- if not, let me know and I'll add it in.

      Joan's Mexican Caserolle has gained legendary popularity!! It's just SO good, and I'm not a big fan of mexican flavours to be honest. It's those chilies that absolutely make it, I'm convinced.

        make zucchini lasagna...or chicken enchiladas with out the tortillas...or the green chile egg thing your daughter makes!! add some chicken to the green chile egg thing.....or make a chicken parmasan or or or or or ...you of all people can not come up with a casserole you make great casseroles!!!!.....you my dear are the casserole queen just do some of your old recipes with out the starchy foods in them!

          Never tried this but it looks good, leave out the almonds to make it induction friendly.

          Incredible Chicken Casserole
          Recipe Number: 901

          Contributor: Mary
          Serves: 12 Carbohydrates Per Serving: 5
          Preparation Time: 20 minutes
          Difficulty: Easy

          Ingredients:
          5 C Diced cooked chicken or turkey
          2 1/2 C Diced celery
          1 Bunch Green onions with tops, sliced1
          Can (4 oz) Green chiles, chopped1
          Can Pitted ripe olived, drained and sliced
          1 C Slivered almonds
          2 1/2 C Shredded cheddar cheese, divided
          1 C Mayo
          1 C Sour cream
          2 C Crushed plain pork rinds

          Cooking Instructions:
          Combine the first 6 ingredients.Add 1 cup of the cheese.Mix mayo & sour cream; add to chicken mixture and toss.Spoon into a greased 13 X 9 X 2 inch baking dish.Sprinkle with crushed pork rinds and the remaining cheese.Bake uncovered at 350F degrees for 30 minutes until hot and bubbly.
