  • need help with chocolate coffee??????????

    Okay I don't drink coffee and have no idea what this stuff is but that is my assignment for the Feb chocolate lovers fund raiser. Somebody else is making chocolate spoons. They said they wanted to give me a low carb assignment so I wouldn't be sabotaging myself cooking for it. for flavors they recommended hazelnut, cinnamon, raspberry and mint


    Do I buy flavored cocoa beans and grind them and brew them like coffee or do I add chcolate flavor to flavored coffees? Can I add cocoa powder to the basket while the coffee brews if I add it to real coffee or will the powder clog the fliters? Do you use unsweetened chocolats if you melt chips for this?


    Edited to add the folk drinking this stuff are not expecting it to be low carb nor sugar free at all and seeing the recipes so far I'm not sure how this could ever be thought of as a low carb assignment.

    My two cents, I don't drink coffee either. But when I was in the army we used to make mocha with hot chocolate mix and instant coffee. Simple and easy. Maybe you could add some hot chocolate mix (sugar free of course) or cocoa to already made coffee.

    Try some searches on mocha. Hope this helps.

        Will any of these help?

        White chocolate and coffee
        3 ounces white chocolate, chopped
        2 cups half-and-half or whole milk
        2 cups hot freshly brewed coffee
        Whipped cream and chocolate curls, optional

        1. Microwave the chocolate and half-and-half in a medium microwaveable bowl on high for 2 minutes, stirring halfway through cooking time. Stir until the chocolate is completely melted and the mixture is smooth.
        2. Stir in the coffee. Pour into large cups or mugs. Top each serving with whipped cream and chocolate curls, if desired. Serve immediately.

        Makes 6 servings.

        Chocolate Coffee
        * 4 heaping teaspoons hot cocoa mix
        * 1 teaspoon instant coffee granules
        * ground cinnamon -- to taste

        Combine in mug. Fill with hot water or milk.

        Viennese Coffee
        4 servings

        1/2 cup chocolate
        2 1/2 cups strong coffee
        4 tablespoons light cream
        2/3 cup heavy cream
        1 teaspoon sugar
        dash of cinnamon
        dash of cocoa
        1. Melt chocolate in sauce pan
        2. Stir in light cream
        3. Slowly add coffee, beating until frothy
        4. In a cold bowl whip heavy cream and sugar
        5. Pour coffee mixture into cups
        6. Top off with heavy cream

        I'm not sure if you want them strictly LC or ??? You could use the flavored (hazelnut especially) coffees in any of these.

              LOL well i don't see how this is going to be nontempting low carb cooking but maybe it was cause they knew I don't drink coffee. So it is basically hot chocolate with the caffeine of coffee added


              Nother question for you coffeee pros how long can the coffee sit already brewed in the urns? we are expecting close to 1500 folk for this thing and it lasts 5 hrs. SHould I make small pots fast or can I make big pots and just let it sit the whole time until it is empty?

                  It's hard to say how long you will be able to leave it in the urns. If you have 1500 people and only half of them are coffee drinkers, you'll probably go through it pretty fast.

                  Coffee does get stronger and more bitter as it cooks and it will continue to cook as it stays heated in the coffee urn. Now, having said that, flavored coffee masks the bitterness of "old coffee" somewhat. Some people use sugar or sweetners and that also masks the bitterness.

                    I'd just go w/ the chocolate flavored coffee beans myself...if they said they were giving you something that you couldn't sabotage your diet w/ then that is probably what they meant anyway. IMHO that is.

                      okay the chocolate coffee will be brewing and in 6 flavors. it is all low carb for me cause they like I thought knew I didn't drink coffee and all the stuff is premixed by the local coffee house.
                      they have chocolate coffee beans they grind up
                      they have a hazelnut chocolate coffee
                      a mint chocolate coffee
                      amaretto choclate
                      mocha jamoca coffee
                      and a mexican choclate coffee I didn't ask if it had hot pepers in it or not.

                      Oh they said the Urns are specially made to not burn the coffee what ever that means and it can sit a long time in there.

                      So me and the urns got a hot date this afternoon and evening smelling lots of high carb chocolate wafing through the air watching folk pig out on chocolate for charity.

                          I know this is too late, but here's something I do on rare occasions. I make regular coffee (I use a folgers bag thingie, but however you get coffee is fine). Then I fill 1/4 with cream and add some unsweetend cocoa (I used bakers), then add some splenda. That's the only low-carb thing I can think of.

                            thanks for all the help. Coffee flowed all afternoon and night. the mexican was not a hit I can tell you. the sculpturs looked fantastic and the smell of all that chocolate was making me ill by closing. everybody got to take home leftovers and a sample gift pack for helping out. mine was full of RS and some belgiun chocolate maker of low carb stuff. knowing if I could I would have wolfed it all down in on sitting and then been toilet sitting for the rest of the day I was able to use my soy allergy to politely say no thank you.

                            I just got out of the meeting today about it and according to the folk who handled the money they raised includidng the silent auction of the scuptures and the personel chef dinners for two for tonight twice their goal. So everybody was all smiles and everybody kept their head low so they wouldn't be appointed chairperson for next yrs and have to better that. I did volunteer for coffee duty for next yr.

                            Oh and Lynne if you are reading this an old lady from South America said she drinks hers brewed with water and not coffee beans but cocoa beans sooooooooooooooooooo you could low carb lower cal yours!
