  • dreamfields pasta---confused???

    Hello everyone! Recently, my father who is on southbeach, can home really excited about this wonderful tasting low carb pasta--5 carbs per serving...
    Here is the info from the website...I'm a little confused on their explanation/their meaning of low-carb...digestible carb vs. low-net carb. yada yada yada....

    5 g * Carbohydrates that are "protected" from digestion in small intestine.

    any suggestions?????

    I think Dreamfields is far and away the best of the "low carb" (so called) pastas. It's really like the real thing.

    I'm not sure of the science behind their claims either, so I waited until maintenance to try it... and now maybe have it like once a month.

    It's apparently very important to undercook it. If you overcook it, it becomes as "carby" as regular pasta.

    I'm sure someone will be along soon with more scientific advice than I've been able to give.

      They treat the pasta with dietary fiber so it slows down the blood sugar response. But if you read diabetic forums on the web, people have mixed results with it. For some people it doesn't raise their sugars, for others it does. And because they add fiber, for some people that extra fiber causes digestive problems like diarrhea and gas.

      Like sally said, you can't overcook it according to the diabetic forums. Overcooking it does something to the fiber so it becomes like regular pasta. Also, there was a comment in one diabetic forum that serving the pasta cold, like in a pasta salad or as warmed up leftovers, had the same effect as overcooking it.

      But whatever the case is, Dreamfields and other grain products belongs in the final rung of the OWL Phase carb ladder.

        I agree with sally that it does taste excellent, but I've had mixed results with it. the first time I had it i made spaghetti with a tomato sauce, and i got terrible cravings afterwards, the second time I had the elbows in mac and cheese, and I was fine, also had that again yesterday and was ok. I think the fat in the cheese probably helped.

        My stomach is very noisey today though, gurgling etc..i hadn't even thought that it could be the fibre in it but it probably is!

          so.....wait until rung 9, or pre-maintance? do you agree that it is 5 carbs or is their really 30 some carbs per serving

            Not sure about quite how many carbs to count (though I usually go optimistic and count 5)... all I know is that if I keep it to their portion (which is small) and don't have it often, it doesn't cause me any cravings or weight gain.

              To safely count Dreamfields as 5g of carbs make sure you either cook it 1-2 minutes short of al dente or cook it to the al dente stage and shock the pasta with cold water to stop the cooking process. Otherwise you run a high risk of undoing the treatment process that stops many of the carbs from being metabolized in the body.

              Also, products like Beano that help with gas problems have been known to also break down the coating and cause all of the carbs to be metabolized. Kind of a double edged sword as all of the extra fiber in the pasta itself can cause gas problems.

              Other than those two cautions, it really is a great product. Rather fickle at times, but as long as it's cooked properly there would be no problem counting only 5g per serving.

                I think it would also have a great deal to due with your "gastrointestinal transit time". That is the amount of time it takes for food in your mouth to go through your stomach and intestines and out the other end. If your GITT is slow, then it gives your body more opportunity to breakdown and absorb those carbs. If your GITT is fast, then the food doesn't hang around long enough to be completely broken down and absorbed...

                  it's definately at least rung9 its made with semolina wheat....

                  as for the carbs..i count them all. i don't trust it.
