  • Jambalaya Soup

    I got around to making Jambalaya Soup found on Linda's recipe website:



    This soup was very good, very tasty! It has 8 carbs total per serving. To cut down on some of the carbs I only used 1/2 small onion. I think next time I will add some green beans and maybe some mini Italian meetballs.

    Has anybody else tried this soup?

    I haven't tried that one in particular, but all I do is take a basic jambalaya recipe, reduce the amount of veggies by 1/2 to 2/3 and reduce the tomato amount by 3/4 to 2/3. And, of course, eliminate the rice.

    I do the same thing for paella. In fact, my mom's seafood stew is a paella recipe really a paella recipe. The first time she made it, she didn't have enough rice in the house, so she just added a little rice and more liquid. My dad loved it, so she's made it that way for over 40 years.

      make jambalya and soups all the time. they are as Atkins friendly as the cook is. Dr Atkins highly recommended eating soup on his program cause it was so filling. I use lots moore broth but mine is homemade without the salt I'd be very carefull adding more boullion or you could get it too salty.. You can boil a fryer chiken and just make your jambalya around it for more liquide if you want

      I do that with pot roasts and soups when the chicken or the beef is done it comes out and pot of soup finishes. yum yum extra cooking done for free.
