  • Nuts for Owl! Mole question?

    hay here is my recipe for chicken Mole and I am going to try to do two things at once ...share the recipe and ask if it is ok for the nut rung?


    Chicken Mole

    6 peeled seeded diced tomatoes
    1 green bell pepper, chopped fine
    1/4 cup ground red chile
    1/2 small can chipoltles
    2 teaspoons cumin
    1 green chili pepper roasted chopped and seeded
    2 cloves garlic, minced
    1 onion, chopped fine
    3 tablespoons cocoa
    1 tble finely ground pumpkin seeds (I may or may not add these depending on the cocoa powder counting as a nut addition?)
    1/2 cup chicken or veg broth

    in a sauce pan pour some unflavored veg oil then saute' the tomatoes peppers onions garlic and spices lightly until you cook off some of the water and it is almost like a sofrito
    then you add the pumpkin seeds cocoa powder and stock...bring to a boils stirring all the time so it does not stick then turn WAY down and stir frequently at a simmer for about 10 min or so....taste for salt


    I serve this by the tablespoon or so over grilled chicken breasts but you can take and cook dark meat chicken, pork or beef and cook it down in very little water shred it and simmer for a while in the sauce ...if you like a sweet edge then add some splenda...like a tsp I believe?

      Uh.. I don't have an answer for you. I have a funny for you though in regards to mole. One of the guys at work just started to learn to cook.. I bought him a slow cooker cookbook and he bought a slow cooker and he graduated to using pots and pans. :yes Anyway he asked me one day at work how do you cook a mole.. as in the little mammal. I was kind of baffled, how WOULD you cook a mole? Anyway, he bought me the recipe he wanted to make.. it was mole.. but not the mammal! :laughing I had to tell him how to say it the right way. :yes

        Nurselady the board has been having trouble and your recipe didn't pop up on my screen till now.

        How many servings it that stuff and how much many carbs are in your finely ground seeds that is what you need to be worryuing about if it is ledd then 5 net for the seeds per serving AND you don't have any other nut or seed product totally more then 5 including it for the day you eat it then it is fine. Glad your recipe didn't have crackers in it like so many do.

          2big I counted the carbs no problem ...I just wanted to know and think I got it answered about the chocolate and the pumpkin seeds but thanks anyway....I only use a tble or so per serving I just put the whole thing into fitday and it works out to very little carbs so I am not going to worry and will make it and enjoy it profusely!!!!.....

            Oh my god I have NEVER heard of a real mole with crackers in it????? a little masa maybe but never crackers!!!....I guess it is possible but I do not get why someone would want to!

              what's mole?
              Female; 22 yrs; very active, 5'11" (182cm).
              Currently not too happy wearing anything much above the knee, or anything fitted over stomach...
              Goal: Running around in miniskirts and bikinis come summer - only a couple of months away here!

                very cute it is actually pronounced MO-LAY!!! but I like Mole better!!!.....it is a sauce from Mexico the recipes are regional and contain chiles and nuts and chocolate and all kinds of things ..traditionally it is made with a mortar and pestal but who has time (I do make it about one time every other year by hand).....

                  I was so excited to find it in a mexican store here and them I read the ingredients no soy :joy but then I got to the crackers and :yikes :raving well you know how I feel about that.

                  So did you grind up whole pumpkin seeds or just the inside part? if you bought them already ground I'm in trouble as that store has them but they are in soy oil.

                  could we use that as a layer in mexican version of 7 layer salad or would it conflict with the salas layer?

                    ask if they have pepitos I think that is what they are called they are hulled fresh pumpkin seeds no salt and grind them up to flour in the coffee grinder....or you can use peanut butter ..by the time you add all the stuff you like in there it does not matter you just need some kind of nuttiness in the whole thing...I am sure almonds would work..but I love the pumpkin seeds..and will be trying them again in a week or so!!! I want to try to bake something with them ..we get pretty big bags of them here at the Latino Market for just under $2 awesome deal imho
