  • Vanilla protein powder

    Has anyone ever baked with this? In an effort to up my fiber, I am converting my grandmas bran muffin recipe. Looking at all the stuff in our new fancy market I saw this stuff. Tasted like flour to me. Do you think it will bake?

    well, it's not going to bake anything like flour.

    Flour has glutenin and gleadin that makes gluten (spellings may be wrong there, been a while since I had to spell them). Gluten is what makes bread chewy and wonderful. It is a protein but is nothing compared to a protein powder.

    Flour is also a starch and acts very differently structure wise than a protein.

    Proteins coagulate when cooked, water evaporates out, and what is left is very different from the original structure. Like an egg white.

    Starches gelatinize and form a structure. think of the difference between cake batter and a baked cake. Most of the liquid evaporates out, but quite a bit is still there. Nice moist cake....

    Sugars carmelize with heat.

    oh, and fats melt. Flakes in a pie crust exist because the fat melts and leaves a small hole.

    So, what this all means... Flour is flour, protein powder is protein powder and never the two will be the same.

          I've baked with it before, but the recipe was already converted to use it. I'm not sure how it would be as a replacement for plain flour.

            Yes I will try to convert it, I have found recipies for power bars and the like using it so with just a few adjustments MUFFINS!!!

              just don't get your hopes up too high for muffins. they will be kinda rubbery!

                Well I tried doing Bran/flax and they are in the oven now. I was too lazy to run to the store for the protein.

                  Lauren, I've used it with flax to make some "muffiny" stuff and it is kinda rubbery, but tastes good. However, I got an awesome recipe where I use it to make crepes. They are fantastic.

                  Substitute the soy protein isolate for your vanilla whey protein isolate/powder.

                        I've made these crepes and they are incredible!!! OMG!!! Now I've got to get some fresh strawberries tomorrow and make some for breakfast on Friday.
