I found a recipe on here for a ruben. That sounds so good. Is corned beef alright for induction? Also should I just buy a whole corned beef and cook it or would deli slices be okay?

Corned beef is okay. Just read the package to see if it has added sugar because sometimes the deli stuff does.

I think it would be tastier if you braised your own corned been brisket, but the deli stuff would work as well.
What does the recipe sub for the russian dressing?

It leaves off the Dressing, just calls for the corned beef, Sauerkraut, and cheese. Saute the corned beef in a pan w/ a little butter or oil. Top with Sauerkraut and cheese, then put the lid on for about 5 minutes.
Sounds good to me though
I think you're right, it would be so much better if I just braised it myself. Plus I would have leftovers and I'm sure less the cost of deli meat.

You can make your own Russian dressing.
It's just mayo, low carb ketchup, horseradish, finely chopped onion and a few drops of tabasco or some other hot sauce.

If you really want to save the carbs you can corn your own and leave out the sugar in the soaking solution but it takes 2 wks so go with whichever you want.by the book atkinseer

not2late, low carb ketchup is alright on induction? I haven't been using any low carb products (except the couple times I left my full fat Ranch at work) since I started. I wasn't sure that would be alright, so I didn't even buy it. Only time I have missed it is when we have that bacon cheeseburger quiche. Plus how sweet does it taste? I've left all added sweetners out of my diet for little over a week, and even the mock danish was really sweet to me.

you can make your own ketchup recipe is in the data base as all the ingerdients are induction friendly in the recipe.
If the nole danish it too sweet you are adding to much sweetener it is a do it to taste recipe. I don't add sweetenr to mine at all cause I thingk cream cheese tastes sweet. You can also add herbs to it and make it a savory danish to fo with a salad or veggie.by the book atkinseer

Oh that is an awesome idea about the adding herbs! I'm definately going to try that sometime soon.
I was going to cut the splenda down to 1/2 tsp next time, but I think now I will leave out it. Thought maybe it would taste really bad without it, but if someone else is eating it like that it must be fine

I make my own dressing the "cheap" way, the way my Grandma used to (of course, modified for this WOE): low carb ketchup (I love it, but I don't eat a lot of ketchup anyway and it doesn't effect me negatively), yellow mustard, mayo and dill pickle relish. These are all ingredients I have on hand all year around for the burgers and hot dogs my kids love. I make a batch of this and keep it in the fridge in a little jar (leftover from some condiment), so it is always available. I love that St. Patty's Day is around the corner, Corned beef goes on sale then and the leftovers are even more marked down afterwards.
Reubens are one of my favorite lunches: I use my own corned beef roast slices, a slice of swiss cheese, sauerkraut and the yummy dressing from above. Throw it on a plate, throw it in the microwave and you will not miss the bread!!! Pass me a big knife and fork....33 yo // Female // 5'4"
