I make a "stuffed cabbage casserole". What I do is slice the cabbage as thin as you would if you were making coleslaw. Add a little onion. To the ground meat I add an egg, a crushed tomato, minced garlic, salt and pepper. Half of the cabbage mixture I put in the bottom of a baking dish. I spread the meat mixture on top of it, and the remaining cabbage goes on top.

Cover it and bake it in a 350 oven for about 30-40 minutes or until the meat is cooked.

That sounds pretty good! I may just make that for me tonight. No one else in the house will eat cabbage so I will have leftovers to last a couple days too.

My mom makes a polish cabish stew. It has cabbage and polish sausage cut into bite sizes chunks...some bay leaves and tomato. Apple can also be added, but leave it out on induction.

            Beat rolling those cabbage leaves

Anyhow, I was looking around the net and found this

If you get rid of the brown sugar and rice it looks very Atkins friendly.

              Here's my favorite:
              Hungarian Sausage/Cabbage Soup

              10 oz bulk sausage, browned
              1 garlic clove, minced
1 medium onion, sliced (original recipe called for 4, but not necessary; I add onion powder to add more onion flavor)
              1 large green pepper, chopped
1 medium head of cabbage, sliced
              2 T paprika
              1 T marjoram
              1 tsp salt
              1 tsp pepper
              3 qts water
1 qt chicken stock (or boullion)
              1 c sour cream

Brown the sausage in stock pot. Add garlic, onion, green pepper and cook until tender (about 6 minutes). Add cabbage and cook (stirring occasionally) until it becomes limp. Add seasonings and cook 3 minutes. Add water, chicken stock (and sliced turnips if desired). Simmer for about 20 minutes. Whisk sour cream into soup and simmer another 10 minutes. Even better the next day.

Boil cabbage until tender. Drain very thoroughly. Chop into slices or strips.

Cook from six to 12 slices of bacon and a pound or two of ground beef in a pan, and drain most of the grease. Add the cooked cabbage strips to this mixture and continue cooking and stirring until the cabbage is well mixed in.

Season as desired with herbs, spices, etc. I like garlic and coriander. Count the carbs on the garlic; the dried stuff can add up fast.

there is already a whole topic on cabbage somebody wrote a p topic called head of cabbage and it is full of recipes on what to do with it if you can find it.

I make NE boiled dinner with mine and leave out the potatoes

it is basically a roast or corned beef
                  veggies
and herbs to taste all boiled together till tender of course you do the meat first and add the veggies during the last 45-30 min depending on how tender you want them. i use turnips, onions cabbage bay leaf and garlic in mine some times I add radishes ( bet you didn't know they lose the radish flavor when you boil them) as little potatoes insted of the turnips.

2big, I saw that post too. I actually did do a search, but didn't find one specifically for cabbage soup. I was really really craving a good cabbage soup, but so many of the things in a traditional cabbage soup I can't have yet, or it sets off cravings for me right now. I ended up making not2late's stuffed cabbage casserole, without the added tomato. Mmmmm boiled dinner. I've got to get a corned beef going here!!
The hungarian cabbage soup looked good too, but I'm not on dairy yet so I am not adding sour cream to my diet.

May have to go print off the recipes from that post since I have alot of cabbage left over though

                      Re: Cabbage Soup?

                      Cabbage Soup

                      28 oz Water
                      2 Green peppers (diced)
1 head cabbage (chopped into chunks)
6 large onions (diced - I didn't put that many onions in mine)
                      Whole tomatoes (fresh or canned)
                      1 bunch of celery (chopped)
                      4 Envelopes onion soup mix

Mix all of the above and cook until soft enough to you taste.

This is a cabbage soup recipe for the cabbage soup diet but it does have everything that you can eat on Induction. You will have to count the carbs (which are few). It makes a big pot of cabbage soup.
