  • tortilla (corn) chip substitute?

    I make a killer hot salsa every summer from my own home-grown vegetables. But since I'm on this WOE this year, does anyone know of a substitute for tortilla chips? I put salsa on a lot of my veggies, but there is something about the heat and corny crunch of salsa and chips that goes so well together.

    Pork rinds might work for crunch, but I don't eat them.

    If you could find low carb tortillas you could bake or fry them. I have some right now that are only 3 net carbs per tortilla. Hmmm, I'm having a thought...

      I'm not sure what Phase of the diet you are on. But for Induction Phase, low carb tortillas are not allowed. They are allowed in the On-Going Weight Loss Phase, Pre-Maintenance and Maintenance Phases.

      For Induction, if you want a crunch, you can try jicama. Jicama is a vegetable that has an neutral flavor and a nice crunch.

      You can also make vegetable chips from Induction vegetables like celeriac (celery root) or fresh pumpkin, however, these veggies are typically autumn vegetables and you might not be able to find them right now.

        Some people use plain pork rinds to scoop their dips with.

        Or maybe some flax crackers would do the trick?
        Wondering how to get 'most' of your net carbs from your induction veggies?

          Trader Joe's sells flax chips. I've never tried them or even read the package.. But they might work

            Before I started Atkins I used to eat the Trader Joe's Soy & Flax chips all the time (in fact, I still have an unopened bag in the pantry). But they're still about 1g carb per chip. If I could limit myself to a few a day, I'd do it; but they always taste like more. They might set off cravings.

              Flax Crackers? I've heard of these. Where do you buy them? And how many carbs do they have? What rung?

                What rung are you on? The low carb tortillas are great if you're on the grain rung. Otherwise maybe you could try making some cheese chips. (Either frying the mini cubes of cheese or frying grated cheese works well. You can also make them in the microwave.) They aren't tortilla chips, but they do taste pretty darn good in comparison!
