  • What Is This Vegetable?

    I bought this vegetable at the store the other day thinking it was kale, but apparently I don't know what kale looks like b/c I just looked online and it is definitely not kale.

    It looks similar to celery but is shorter with fatter stalks. It's about 3" in diameter at the base and has medium size dark green leaves at the top. What the heck is it? For some reason I can't upload my pic I took, so if you throw out some ideas I'll do an image search.

    And a recipe for it would be appreciated too!

    Oh, the joy of undiscovered veggies on Atkins!!

          Oh, I love bok choy too! It's very very common in stir fry. Almost every stir fry has lots of bok choy in it. Chinese cabbage.

          Cut it up and stir fry it in olive oil. Yummy.

            Thank you. That's what I ended up doing -- except I didn't cut it all up, just cut off the bottom and stuck the stalks in the pan with garlic and olive oil. You're supposed to eat the whole thing leafy part and all, right? Or is it like celery where you don't eat the leafy part? (p.s. I feel really stupid right now--I swear I know how to cook)

              I think, traditionally, most people (and chinese stir-fry) use just the stalk kind of like celery. However, the green tops are very tasty too, stir-fried in olive oil. Greens are always good So, if you liked it, continue to eat it. Yummy.

                I eat the stalks and the leaves but it's best to add the leaves to the pan at the end of the cooking time. Here's a good recipe from America's Test Kitchen:
