  • venison for dinner--any suggestions

    I'm having venison for dinner tonight. Does anyone have any suggestions for what I should eat with it. I'm the only one eating it (and will be for the next few days). Last night I made lettuce wraps with it. The meat is really spicy and soooo good. My sister thought it was too hot, but I think she's crazy, it has the best flavor and it such a nice change from chicken or beef.

      Venison is a dark, flavorful and low fat meat, so you might want to make sure there is some fat in the meal to maintain your ratios. I like to sear venison quickly in rendered duck fat, ideally with foie gras, but butter or a neutral oil will do. Spicy flavors go well with venison, and you can also try some of the following depending on your rung of OWL:

      Roasted root vegetables - Cube jicama, pumpkin, turnip, a bit of rutabaga, fennel root, possibly some winter squash or carrot, toss in butter and seasoning and oven roast. Early rung OWL'rs stick to jicama, pumpkin, turnip and fennel. I like black truffles as seasoning, but you can be creative if you like. Use plenty of butter and cream.

      Demiglace sauce - reduce chicken or beef stock until it coats the back of a spoon. Melt some butter into it, about half butter by volume. Add a bit of heavy cream or full fat sour cream if you like. Very rich and yummy.

      Venison wrapped in bacon is always nice, but don't overcook the venison when crisping the bacon. Pre-cooking the bacon can help.

      Arugula and fresh spring greens with white truffle oil dressing if you can get it, olive oil if you can't, tossed with a few raspberries and almond slivers would be a nice side salad with a medallion of venison.

        that sounds good Naja but too much work for a busy day ...I say marinate it in a good herby italian dressing for a day and grill it to medium rare!!! ....that is the best way ....imho
