    Oh my gosh! I just had THE BEST mashed cauliflower!!!!!!!!!!!

    I can't believe I was so scared to try it....as I'm not a huge fan of cauliflower.....and it so ended my craving for some mashed potatoes!!!!!

    I like it also. You can put gravy on it, cheese on it butter on it. just like a potato

      I know how you feel! I was pretty grossed out by the concept too. Last time I made it I put the usual stuff - butter, cheese, garlic powder and salt & pepper, but I added a couple tablespoons of ranch dressing. It turned out really good!

        Oooh and what kind of gravy should I try??? Any suggestions on lo-carb ones? The ones I've been seeing in the market has alot of sugar in them!

          Yep, I really enjoy that stuff. I've made it "loaded" too for the family. Settles that gotta have a potato craving. Oh if you are a fry/chip eater try slicing turnip and giving it a deep fry. Turns out a bit softer than chips but a nice sweet substitute.

            I too am a late convert to the mashed cauliflower worshippers. In fact, after more than a year (and trying it maybe 3 times), I finally made a batch that was really good. I used frozen caulflower, since fresh $3 a head and I didn't want to waste $3! I steamed it in just a little water in the microwave, then I added butter and cream cheese -- then used one of those hand held blenders. That thing did the trick! The final product ended up with a nice consistency that my previous tries had not produced, and I added a little cheddar cheese (what the heck!) -- and it was quite good. Maybe something in the freezer process affects the flavor -- this seems to have much less of a cauliflower taste than when I had used fresh !

              Cauliflower is evil wicked expensive right now!
              My pet peeve is to open the wrapper, and find out that half of it is green stem and leaf bases... :anger

              I like to grate it, saute it a bit and use it as rice as well. It doesn't absorb like rice, but it's good!
              I'll sometimes grate it, drop it in boiling water for a few moments, drain it and use it in place of rice in this recipe:


              It's also great in the Cauliflower 'Potato' Salad recipe in DANDR..mmmm

                I'm another cauliflower convert. The first time I mashed it, I didn't care for it much. The next time, I added the cream cheese and that made all the difference in the world. The other night, I made LindaSue's recipe for Almost Just Like Twice-Baked Potatoes. They were heavenly!

                  oh i was just thinking..... i bet you could make a wicked cauliflower fried-rice type of dish..... mmmm ensive :yes
                  Female; 22 yrs; very active, 5'11" (182cm).
                  Currently not too happy wearing anything much above the knee, or anything fitted over stomach...
                  Goal: Running around in miniskirts and bikinis come summer - only a couple of months away here!

                    um no it is not like potato it is like mashed cauliflower...potato is like potato..and I do miss them but can move on in life!!!..... :hug
