I know polenta is cornmeal cooked in stock but I was wondering what kind of a carb count would that have? :nono no I didn't have any but my DH had it at an Italian restaurant this evening and said it was good. I don't dare take ANYTHING that I don't know the carb count.

good for you cornmeal is ground corn and high carb food and high GI food. Basing it on a serving size for grits you would have had about 30 carbs per cup cooked. you can get corn bran from honeyville grains on line and use it in your corn products like tortillas corn muffins and polenta. I have and I like it some of our better cooks think it is a bit grainyby the book atkinseer

Ready for this? 1 cup has 103 carbs. Oh,you can deduct 7 grambs of fiber, so that's 96 per cup. YIKES!

The only stupid question is the one that goes unasked!
Here's my cut and paste about fitday. It's handy to have around for questions such as these as well as being a day to day tool.
Get yourself a free account at www.fitday.com if you don't already have one and enter your foods there. The chart will show you how you are doing. Your goal is ideally 65%fat/30%protein/5%carbs, and it's ok if the numbers fluctuate a little bit. If you're following the plan as laid out in DANDR, they should naturally fall within those parameters.
It doesn't subtract the fiber from the carbs so you have to do that yourself in order to get your net carbs but that's as simple as a glance at the chart. If fiber isn't listed on the chart, look to the left and go into Goals. Set yourself a fiber goal (I put 5 min, 5 max, any number will do) and you'll see it appear on the chart.
Fitday is a great tool, and has tons of features, like a graph to plot your weight loss, a journal you can keep etc. Check it out!

There's a good article on cornmeal substitutes for baking in Low Carb Cooking Lessons. I expect it would work beautifully for polenta as well, but the texture might be a bit different since it is lacking starch and won't set up as firmly as real cornmeal.
