  • HELP!-How do I cook Lamb Shoulder blade chops?

    I've never eaten lamb before. But dh bought it so I need to cook it. How? What seasons do I use? What meat would you compare it with?

    I cook them like I do pork chops: I heat up a frying pan, add alittle oil, add the lamb and let it cook on both sides. Most people like lamb rare to medium rare. I prefer it medium.

    I usually season my lamb with salt and black pepper. You can use herbs like rosemary and garlic too. Mint is also a traditional flavoring, but don't use mint and rosemary/garlic together because they have strong opposing flavors. Or you can make a flavored butter: soften the butter and mix the herbs into it. After the meat is cooked and put on the serving platter or plate, put a dollop of the flavored butter on it and allow it to melt, forming a sauce.

    The texture of the meat is like beef or veal. The flavor is like, well, lamb. If you've had goat cheese before it as a similar goaty-lamby flavor.
