  • Frozen/Microwave Help.

    My college's cafeteria has a very small selection - mainly hamburgers and sammys. The only thing I can eat is a chef's salad from the (sub-par) salad bar. We have fridges and mircrowaves, though.

    I was thinking about making a bunch of low-carb meals on the weekends, putting them in tupperware, freezing them and then microwaving them at school.

    Problem is, I grew up without a microwave and just bought one today. I have used them before, but I really do not know where to begin.

    I am quite a good cook, so that won't be a problem, but I was wondering if anyone had some good recipes for this. I looked on the internet, but I could not find any.

    Well, I'm guessing you're cooking at home on the weekend and then taking the foods with you back to school during the week....right?

    If that's the case, there's a lot of recipes on Linda's website http://www.genaw.com/lowcarb/index.html to choose from as far as precooking cassaroles and stuff that's pretty good for reheating.

    There's also some great breakfast recipes in the food forum of this site, like making mock danish's, and even omletes.

    During the school year, I pretty much make up chicken salad, tuna salad, and cook up ground beef for taco salads. The chicken I usually grill up (or you can cook in a pan) until done completely, and then shredd up with a knife or in a chopper...add some veggies to that mix along with mayo and it's a great protein salad.

    Hope that helps. If not, you might share what you want to use your microwave for...reheating or main cooking.

    If you're using your dorm with the microwave and fridge as main cooking, you might consider the recipes from Linda's website to give a try...I'm not sure if there's a "rubbery" texture thing to worry about or not. One thing you might also consider is investing in a small toaster oven if you can get one in the dorm. There's a lot you can cook in a small toaster oven as well....chicken, steak, pork chops, etc. Veggis are great "broiled/grilled" in the toaster oven too.

      Thanks for the links. Yeah, the point was to cook on the weekends and then just grab a container out of the freezer in the morning. I may just start experimenting a bit with my own recipes.

        A lot of the casseroles I make on the weekend last really well in individual serving containers in the fridge...unless hubby grabs ahold of them before I get to them. But for the most part, I noticed that they last a good 4 days. Tweaking your own recipes is a good thing.

          Apple's given you some great tips. I just wanted to say: "Kudos to you for planning ahead".

          I love my microwave... would be lost without it. Use it mainly for re-heating but also for some cooking: Mock Danish, flax crackers, some veggies etc.

            I really liked that Linda's website. Some of that stuff never even crossed my mind. I like all the vegetarian recipes too. I hope I am not alone here, but for some reason, eating loads of meat just kind of grosses me out.

            After reading up a bit on the microwave, I think that low carb foods will probably do better in the microwave than regular foods. No soggy pie crusts or bread to deal with.
