  • Awesome Asparagus

    Hi All

    I made this for my dinner tonight and thought i would post it here in case others might like to try it. My Motherinlaw used to make this and i think it is Sicilian.

    It looks a bit erky but tastes fantastic and its my favourite way to do asparagus.

    Wash and chop some fresh asparagus then fry it in olive oil until tender . Beat up an egg with a little salt and pepper then scramble it into the pan with the aspragus. thats all there is to it.

    You could also make it like an omelette like creation by not scrambling the eggs but just pouring themin and letting it set.
    Its a delicious combination and a something new to try!

    This is how my dh likes to eat his spinach, I hate spinach so I think i will try this! Thanks for the recipe!!

      Eggs and asparagus are delish! If you like fried eggs, try this: slice the asparagus into thin coins on the diagonal. Saute them with oil or butter in a pan. Salt and pepper them to taste. When they are tender, nudge them to the sides of the pan, forming a "well" in the center. Crack the egg into the well. Add about a tablespoon or two of water around the sides of the pan. Cover the pan and allow the egg to cook/steam until the yolk is the doneness you like. Slide it onto a plate and eat.

      It looks a little weird, but it tastes good and makes a great light meal.

        And before you fry them, boil them for a minute in hot water. They´ll keep beautiful green and crispy!

          Sounds really yummy! I have wild asparahus in the freezer so I think I'll try it for breakfast tomorrow.
