  • Chicken with a Tarragon Cream Sauce

    Hi all,

    Here is a quick and easy one pan dish:

    2 Tbsp Olive oil or butter
    4 Chicken Breast halves cut into strips or cubes
    1 small onion chopped (about 1cp)
    1-2 tsp crushed garlic
    1/2 cp Heavy Cream
    2 Tbsp cream cheese
    1 tsp Tarragon
    1 Tbsp capers (optional)
    Pepper and salt to taste

    In a frying pan on medium heat, add oil or butter, onion, garlic, and chicken and cook until chicken is done. Turn heat to low med/low. In a separate bowl mix cream, tarragon, and cream cheese until well mixed, then pour into the pan with the chicken mixture. As it simmers, stir the bottom of the pan you will see the sauce thicken and turn brown. If it thickens too much, add some water a little at a time. Add capers and mix just before serving.

    Add a favorite veggie or salad.

    Serves four.

    Thanks KHo - I used to love making (and eating!) Chicken Tarragon but my recipe had flour as a thickener (and to dust the chicken before frying it) and I never hunted for a lo-carb version. Your recipe sounds great!

      Hi Wendy,

      I experimented a few times but the nice thing about this recipe is that the cream cheese makes it a little thicker to begin with, and the sauce will reduce on it's own the more you simmer. Too much cream cheese makes it taste like a stroganoff - which may not be a bad thing depending on what you're going for! Add mushrooms and you have stroganoff!
