    Bought a can of pumpkin to try the mock danish with pumpkin... not loving it. So, wondered what else I can do with the canned pumpkin. I'm on induction.

    I just made a delicious breakfast for myself with half a can of pumpkin, 1 oz of cream cheese, 1/4 cup flaxseed (you may want to reduce this if it's too much fiber for you) and a pkt of Splenda. I warmed everything except the flaxseed in the micro for two minutes (my pumpkin had been in the fridge) and then added some cinnamon and a splash of cream on top. Really good...if that's your thing.
    Or you could try this recipe on sfs.com...mock pumpkin cheesecake where you use 3oz of cream cheese with 1/2 cup of pumpkin, microwave for 40 secs, add Splenda and cinnamon and you're away. I love it but all depends on you. Hope this helps!

      I bring crustless pumpkin pie with me to work every day for a mid-morning snack.

      1 large can of pumpkin
      4 eggs
      splenda to taste
      1/4 cup heavy cream
      pumpkin pie spice to taste

      Mix together, pour into a greased pan, bake at 350 degrees until firm.

      I put it into individual tupperware containers and keep in the fridge, then just grab one and put it into my lunchbox in the morning.

        I use pumpkin in non-sweet recipes (it is a vegetable afterall! )

        Canned pumpkin:
        Mock mashed sweet potatoes: heat the canned pumpkin, stirring constantly until most of the water is boiled out. Remove from heat, add salt & pepper to taste, heavy cream and/or butter. Serve as a side dish for roast turkey, pork, chicken, etc.

        Pumpkin soup: there are plenty of pumpkin soup recipes on the Web, many of them are naturally low carb or can be altered to be low carb. It's a very delicious comfort food type of thing.

        Fresh pumpkin:
        Remove the seeds and peel the pumpkin.

        1. Cube the pumpkin, rub with olive oil, salt and pepper. Put into a shallow baking dish and roast at 450 degrees F. Stirring occasionally. Cook until pumpkin is tender and lightly browned. Salt and pepper it to taste. Serve as a side dish with turkey, pork, chicken. Leftovers can be tossed into a blender with chicken broth and pureed into a soup.

          I have to say that I hated the pumpkin. I loaded it up with cream cheese in the microwave and doused it with splenda and pumpkin spice... it just never worked for me. I was very disappointed. I like sugar-laden pumpkin pie but I guess I haven't found a sugar-free pumpkin recipe that will work for me... hubby usually eats anything and he couldn't even choke it down.
