Hey....wondering if anyone knows if kimchee jigue is acceptable...I'm not on induction and basically it's a Korean soup with pork, pickled cabbage, tofu (has 7.4 g carbs in 4 oz serving), and I believe a few veggies.....wondering f anyone knows if there's anything else in it or if it sounds pretty acceptable...lol

I'm so off because I'm half Korean and my mom usually cooks it for me but she and I are being quite lazy so I'm on my way to the Korean restaurant around the corner from me, so I definitely wanted to know before grabbing that and some Kalbi!

I am insane over Korean food!!! I even make my own Kimchee!!!..most dishes seem to be fine especially the soups ...if you are on induction you can eat around the tofu.....I love the kimchee casserole with out rice it is perfect....or the hot and spicey seafood stews and ..the egg and seafood pancake there are soo many things you can eat Korean ...bullgogi is great just avoid the bean paste and rice...oh yeah and stir fried spicey Octopus..or squid....the Skate egg soup.....my mouth is watering!!!! Kalbi may have sugar in the marinade so ask first...Korean food if it is authenitic is usually very low in sugar compared to other Asian foods it is extremely healthy...IMHO!!!

jigue has sugar in it i think. i used to eat it a lot a my favorite korean restaurant here in los angeles (koreatown). unfortunately, i distinctly remember it having a "sweet" taste to it....it was very subtle. if you made it at home, i'm sure it'll be fine cause you're controlling the ingredients.
i'm asian too, and for the six days that i've been low carbing, i can't believe how much i miss rice, especially sushi...i'm trying to come up with creative ideas...but i'm sorry, i CANNOT bring myself to substitute cauliflower for rice. i've barely grown past the fact that it looks like brains to me!
btw, I LOVE Kimchee too! and i'm going to make my own version soon!

I posted a great kim chee recipe somplace on this board ...my dear friend is Korean and she makes the most wonderful kimchees the one I posted was the regular napa kim chee recipe she uses...and there is nothing regular about it when you make your own...I love it fresh then have to taste it everyday until it is just tangy enough!!! ....yum kim chee!!! ....try a kim chee omelet!
I just stir fry some kim chee in a neutral oil a pan then add several beaten eggs on top cook until the bottom is cooked flip it and then while the other side is cooking drizzle some sesame oil and sprinkle a few toasted sesame seeds on top (leave off if you are on induction)....that is it put it on a plate and dip in hot sauce if you like...yummo!!!

I grew up in korea (and am half korean as well) and know that most korean kimchi and food is okay for induction and low carb in general. I miss rice too, but as long as I have my cucumber and cabbage kimchi, I'm fine! Kimchi chigae is great for induction! I love using pork to fry the kimchi with! It comes out soooo yummy! If you go to a korean restaurant or want to try out some new dishes/recipes here is a quick list:
Kimchi Chigae (Fried kimchi with chicken/beef/pork/octopus/squid/fish). You choose what kind of meat. Even if I don't have some meat on hand, I use regular bacon cut up into bite size pieces.)
Hot and Spicy beef soup
Beef Tripe soup (also spicy)
Bulgogi (chickem, beef, or pork)
Kalbi (marinated, BBQ'ed shortribs)
Oxtail soup (not spicy, but in a nice clear broth with eggs)
Spicy seafood soup (soooooo goooood)
whole fried fish (most times it is a mackerel)
and of course the extremely wide varieties of kimchi! I do recommend you try to make them at home if you can so you can control the sugar. I used to watch my mom and her sisters make all kinds of kimchi and add small amounts of sugar. I make mine at home and it is so easy to make! I prefer to buy the cabbage kimchi at the store.

I'm not Korean, but I enjoy a variety of ethnic foods. There is a large Korean supermarket about a hour away from me. Every 3 to 4 months I go and stock up (because they have superb vegetables, fruits and fresh fish.)
On one visit I found dried squid strips: they're a really nice low carb snack. They aren't fishy or squidy at all and have a sweetish taste to them (and they have no sugar added!)
There are a few items that I have absolutely no clue what they are! So it's good to have a 'go-to' person on the board!~Megs~
