Yesterday I made bbq ribs in the crockpot with low cal/low carb bbq sauce. I have leftovers but not enough for a second meal by itself. Any good shredded beef recipes or ideas so I can stretch it out for a second meal?

Basically, you can shred the beef and reheat it with whatever bbq sauce you cooked it in....That's what I do with pulled pork: toss pork into a crockpot with a chopped onion, chopped tomato, a tablespoon of mustard, a tablespoon or two of vinegar, a pinch of cumin and a chipotle pepper. Cook until the pork is fall apart tender. Then cool, skim off the excess fat, and reheat. I use the onion, tomato, mustard, vinegar, cumin and chipotle pepper because I don't like bottled bbq sauces---they're way too sugary-sweet for my taste buds---and that combination gives you a smoky-spicyness without the sugary-ness.
What I do with leftover pulled pork.....
Make over-easy eggs and put them on top of a dish of pulled pork for breakfast. I love this as does the bf. You could do the same with the ribs, just pull the meat from the bones. I make my bbq spicy so the egg kind of smoothes it out which is great for breakast.
the leftovers might also be nice as the protein portion of a salad
