  • I have an Idea

    As some of you know Nurselady and I have been friends when we met at a Weight Watcher meeting in the mid 80ies and I think our love of food, hiking, camping and adventure brought us together. We have had some great adventures!!!!
    When I lived in Washington and we were neighbors we would cook up an ethnic meal once a month and invite all the friends. We did just about every culture you could think of.
    We spent lots of time in librarys looking for ethic cuisines but also searching out ethnic grocery stores in the area. That was easy as we lived in Seattle area and there were plenty.
    We could do this right here, and here we have folks to help us from all over the world.
    We could come up with a country or cuisine and then figure up a menu and make it low carb or just come up with a low carb menu for each cuisine.
    I would love to start with soul food as it was one that we did more than once and enjoyed and this is a perfect time as its African American Month and Martin Luther Kins's birthday last week

    That sounds like a lot of fun. A large portion of my family lives in AL, and I was born there and lived there a bit, so, I have been brought up on that kind of cooking. Some soul food recipes are already low-carb, such as collard greens, southern style green beans, and roasted turnips.

    Naja has a great LC cornbread recipe on file in the LC cooking section, and I bet we could find some great ways to adapt fried Okra and Green Tomatoes (not like I will actually be able to find green tomatoes anywhere now, but still).

        Oh remember our Soul food Lynne.....we could cook up a storm and feed an army!!!

        I will do the greens? should we post recipes or just menus of low carb soul feasts?....or just do the meal and report back?....

          ok what about a mock pot luck? we start with soul food as you said and everyone brings a dish and posts the recipes...like say I bring the collards, or something and I post my recipe?....

            Cool, idea Mock Pot luck. Lets start a new thread for Soul food. Naja is bringing the corn bread, nurselady the greens, and I have a sweet potato recipe. (Don't worry, its low carb)

                  well you know for a fact that I am not going to suggest flax!!!!


                  hay I think there is a huge difference between Grits and polenta!!! worlds apart!!! and I love grits...cheesegrits!!!!..with lots of jalepeno!!!!.....ok can we make that????? shoot I just ate and now I want cheese grits...oh but polenta is my absolute favorite....different corn!!!
