  • Making yogurt

    Ok, guys, I'm making yogurt today. I have a yogurt maker. The instructions say to use milk, either whole, 2%, or 1%. So I got some whole milk but then I got to thinking, I wonder if it would be better (from this diets point of view) to use heavy cream and water. Or would that not work with the yogurt making process? Thanks Guys,

    The yogurt culture needs the lactose in milk to ferment, so cream wouldn't work at all.

    However the bacteria in the culture turn the lactose (milk sugar) into lactic acid, which is why even those who are lactose intolerant can usually eat yogurt. It also means that though you start with milk, which is high in carbs, the sugar carbs become lactic acid, which is not metabolised as sugar to the best of my knowledge.

    I read somewhere that as a rule of thumb homemade or (truly) natural yogurt has about one third of the carbs as the amount of milk that was used to make it.

        Thanks Kate, I didn't know that. I'll stick to milk. I actually have it in the jars now getting made.

          It has been ages since I made homemade yogurt, but the best recipe I found was at the Martha Stewart website. It was perfect every time. So much better than anything I've ever bought at the market.

          I need to go make yogurt! Thanks for reminding me how yummy and good it is!
