    Hi,
    Your all invited to our Cuisine of the Month pot luck and this month is going to be Soul food. Bring any dish you like, along with the recipe.
    Only rule is that it has to be low carb, and if not induction friendly, please so state.

    I think I am going to bring Blackened Catfish

    oh can I bring my smothered okra and my collards?

    and i make corn bran muffins for cornbread but that is OWL rung 9 foods

      how about "Smothered Chicken" from Nurselady?

      1 3lb whole chicken, cut up
      3 tsp. finely chopped garlic
      1 cup dry white wine, beer, or chicken stock
      1/2 cup fresh chopped parsley
      1/2 cup diced red bell pepper
      1/2 cup diced yellow bell pepper
      2 cups diced onion
      2 tbsp. oil
      1 tbl Cayenne pepper, or to taste
      1/2 tsp ground coriander
      Salt, and lots of fresh cracked pepper to taste


      Directions:
      Rince the chicken well and soak in salted water for 30min drain and pat it dry. Season it with the cayenne pepper, coriander, cracked pepper and salt. Set it aside to let the flavors blend for a few minutes.

      In a large deep skillet heat the oil and saute the onions and the peppers and parsley for a few minutes. Add the wine and the garlic; stir well, then add the chicken. Mix well over medium heat and cook slowly for about 2 hours stirring occasionally (do not cover). Add some more wine or water if needed.

                okay I'm adding my jambalya without that yucky bowl of rice under it

                oh and low carb (pumpin ) faux sweet taters should be in the thanksgivng holiday data base area

                okay and those OWL beans too.

                Salmon Croquettes Atkinsized ( is that a real word?)
                Ingredients:
                1 12 oz can pink salmon bones and all
                2 Whole eggs
                1/4 cup chopped onion
                1/4 cup flax meal or 1/3 cup crushed porkrinds you may need more or less depending oh how wet the mixture is.

                I don't add salt but you can if you want too.
                1/2 teaspoon ground black pepper

                pour all of the ingredients into
                a large bowl and mix them.
                Mold them into patties (like thick homemade
                hamburgers).

                place in a greased heated skillet and cook like burgers browning on both sides

                    Green beans

                    2 cans (you can use fresh if you're not in a hurry) french cut green beans drained.
                    1 small onion diced fine
                    1/2 of a red bell pepper chopped fine
                    1 cup sour cream
                    2 tablespoons frank's red hot sauce
                    1 cup shredded cheddar cheese

                    Preheat oven to 350degrees.

                    In a small skillet, melt some butter and sautee the onion and pepper until they are soft and the onions are just turning golden brown.

                    Spray a baking dish with non-stick spray, add in green beans, pepper and onion. Spread evenly. In a small bowl mix sour cream and hot sauce. Layer sourcream mixture on top of green bean mixture and top with cheese. Bake until the cheese is melted and just turning golden brown.

                    Probably nowhere NEAR soul food. But it's pretty good!

                      Good Origam, you did find something.
                      I am going to bring catfish. Now usually catfish is batter fried, but I am going to blacken it instead.

                          Look in Low Carb Cooking lessons for an awesome cornbread recipe that doesn't have a speck of corn in it. That would be yummy served with collard greens and pork hocks.

                            I have never had chitlins, but I see them in frozen blocks at Safeway all the time. If someone wants to clue me in on how to prepare them, I am game.

                              Sounds good. We have Najas Cornbread
                              Blackened Catfish
                              Origams' green beans
                              2big is really outdoing herself with jambalaya, faux sweet taters, salmon croquettes Okra and Collards.
                              Nullo is trying to locate a recipe for chitlins.
                              Nurselady is bringing Smothered Chicken
                              So far the only think that we need is a dessert and something fresh like a salad.
