    A little zing with your salad?

    1 head romaine lettuce, washed and chopped
    1 head of spinach (do they sell them in heads? I usually find them in multiple stalks banded together?) chopped
    Some endive chopped
    2 hardboiled eggs, sliced
    3 sliced of cooked bacon, crumbled
    1 good sized tomato diced (or you can use a can of drained diced tomatos)
    1/4 cup blue cheese crumbles

    Toss all together.

    I like to use a really robust Italian dressing... but I pour it into a bowl and add a dash of cajun seasoning.. about 1 teaspoon. ZING! You can do the same with ranch and blue cheese if you like.
    Female/32/Still too big, but getting smaller..

    Instant insanity!

      first you have to open all your windows and turn on a fan.then take all the chitlins and clean the ick out of them ...cut them up .....then you boil the snot out of them and your house stinks be aware!!!......when you are done and they are tender you drain them ..stir fry some onions and garlic in olive oil add the boiled chittlins and stir fry it around and serve with hot sauce....eat nurseladys portion...lord knows I tried to eat these things!...I like tripe but chittlins are just not my favorite! :no

        Oooo...can I play?

        I'll make dessert. Raspberry Cobbler (I don't know "soul food" so I did a google search - cobblers were listed)!

        I'll use CarbQuik with a bit of Splenda and vanilla added. I'll top that with fresh raspberries mixed with a bit more Splenda and maybe some SF Raspberry jam. Bake and add a nice dollop of whip cream on top.

        This is making me HUNGRY!

          I was thinking about blackberry cobbler -- same recipe with CarbQuik -- or strawberry shortcake! Same idea -- make the drop biscuits with a little spenda and sour cream -- put some Splenda on the strawberries and let them get juicy, and put a dollop of whipped cream on it! (I just had some of this and it was pretty good!).

          Although, I think a blackberry cobbler fits the bill! My experience with raspberries is that they are too fragile for a cobbler -- they turn into mush. I'd through some whipped cream or LC vanilla ice cream on top of that too!

            Cobbler for dessert just fit the bill. Thanks guys for coming to our SouL Food Pot Luck.
            Your invited next month to our next one. New Zealand cuisine. Thats going to be a challenge but we have a great Mod who will come taste and see how we did.

              OK I'll bring turnips and collard greens.

              Sautee diced turnips in olive oil with garlic
              Add sour cream mix well, sprinkle with cheese
              Bake until golden brown

              Fry up some real bacon - Remove and crumble, set aside
              chop collard greens and add to bacon grease
              cook until tender
              Add white vinegar to taste
              Splenda to taste
              A nice does of black pepper to taste
              and the bacon cumbles.


              Neither is induction fodder!
