  • Coconut Flour

    So I finally found coconut flour at our local bulk store. Just curious how many people have been using it..and what the experience has been? I bought some shrimp tonight and thought tomorrow i might try 'breading' them with cocount flour and an egg wash?

    I found this site for recipes on the net that has some the are easily low carbed...though the cake recipes have a ton of eggs in them!!

    I really don't like the taste of coconut, so I don't use it. But you should be able to use it as a breading for things like shrimp.

      and it definately has a coconut taste/smell to it...on one site it says that you could use it for meatloaf but i'm thinking...blech!! i think it would be best for desserts, muffins or anything that goes with coconut like shrimp.

      I tried the muffins the other day and they came out ok...it's a very dry flour, and doesn't have gluten in it so i don'tthink it could be used in place of flour..and which explains all the eggs in the recipes.

        That's the thing about coconut flakes/shreds, they're very dry and they have a strong coconut flavor. It's weird, but I can't stand the taste of that shredded coconut stuff or coconut milk, but I don't mind fresh coconut or the coconut water. But it's hard getting a young coconut and breaking it open...well, that's an upper body workout to out do all upper body workouts!

        Maybe you can try soaking the coconut in water to re-hydrate it alittle if you use it for baking?
