  • Need suggestions

    I'm having an office retreat at my home this week and need to prepare a nice lunch for my staff and co-workers. I'm doing induction and want to stay clean, but I also know atleast one attendee is doing a very serious low fat diet on doctor's orders, so I want to accomodate everyone. Any thoughts?

    definately have salads, you can offer low fat and full fat dressings.

    I have a great recipe for salmon steaks, basically you coat them lightly in sesame seeds grill them, or pan fry toss on a splash of soy sauce and top with a sauce made of cream and a bit of wasabi, you could do this and serve the sauce on the side. just the sesame and soysauce is good on its own.

    it would be nice served with a spinach and beansprout stirfry, stirfired in just a bit of sesame oil...sesame oil has a really stron taste so just a few drops goes a long way.

    or how about grilled shrimp?


    I am thinking salad, seafood and fish fit well into low fat and low carb diets

      Gees, pammie, I know I'm coming up to visit.
      Salads are always a great idea.
      Veggie tray, with a couple of dips
      Cold cuts come low fat and high protein and cheese for those not on low fat.

          If your guests can't or don't like fish, you can make grilled chicken breasts. For the low fat person this is ideal and you can serve it with a fresh vegetable based sauce, like salsa or pureed roasted red peppers. You can et the same thing, but add some fat to your serving like a dollop of sour cream or mix together Dijon mustard and mayonnaise for a sauce.

          Vegetable salads are ideal. You can serve fruit for dessert.
