  • Quick steak question

    I am a novice at cooking steak, but bought one tonight for my dinner.

    It says 'rump steak extra trimmed - ideal for grilling'. I was wondering how you all make your steaks in order not to be all tough (I pan friend one once, came out like leather).

    Also, would you grill it? Is that ok fat-wise?

    All ideas welcome!

    Alexa, buy yourself a meat tenderiser. Either wood or metal mallet type thing. It breaks the fibres of the meat down and makes it less tough.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

          Although rump steak is sold for glrilling it is a fairly tough cut - unless you have a tenderiser it is going to be pretty tough whether you fry it or grill it. I buy it for stir fries - sliced into thin strips for stirfry it comes out very tasty and the tenderness or otherwise isn't really an issue.

          Sometime they are sold pre-tenderised - either chemically or by bashing, in which case you will see sort of dots left on the surface - but generally for grilling/frying, if you want a tender steak, you need sirloin or fillet.

            Who knew eh? I wondered why it seemed so cheap compared to the others! I Might try bashing it with something else...before I can get to the shops for a tenderiser!

              A rolling pin could do the trick Alexa, but at the time of posting this you have probably already cooked it and eaten it. How was it?

                Thanks for asking Richt! BF came home early enough to have dinner with me after all, so I did chicken instead.

                I'll look for a tenderiser before I have it on Thursday I don't even have a rolling pin - so ill-equipped!

                  A cheap cut that is not tough is the eye of round. You usually will see these cut into 3-4" diameter round steaks and about 1/2-3/4" thick. They're lean, not tough, and cheap. I think usually about $4/lb. Try those out. The rump steaks can be very tough and need a tenderizer. I usually just throw some salt and pepper on mine and broil them in the oven for about 3.5 minutes on each side. Very yummy!

                    BEAT the crap out of it to tenderize and then slow cook. do not fry. just slowwwwwwwww cook. I like mine med-rare so just till its juicy pink in the middle not bloody. Grill same way too. I like to put mine in some aluminum foild, smidgin of butter, sliced mushrooms, and garlic salt. poke small holes in the bottom to let the liquid drain an mmmmm mmmm mmmm

                      A marinade usually helps with a tough cut like rump-----something acidic like a salad dressing, wine, lemon juice, etc, depending on what you're gonna do with it. You could marinade it in rice vinegar (careful, some add sugar), then slice then and stir fry with broccoli, mushrooms, red pepper slices and bamboo shoots......

                          When you don't have a tenderizer just pick the thing to death with a fork and then beat it with a hammer same effect and no need to go buy anything else. I'm a eye of round buyer as well ........ good price good cut of meat ..... another thing I watch for is when a nice roast goes on sale. It is often cheaper then steaks and you can take the roast right to the butcher window and have them slice it into steaks for the same cost that the roast was .........I do this with pork roasts as well!

                            Yeah, I made an awesome rib roast for Christmas that was sooooo good! Like prime rib in the restaurant. You van do the same with filets and get a big hunk...that's a nice cheap way of getting filet steak.
