Here is a soup that I plan to make this weekend. Saute chopped onion and garlic in butter. Add sliced mushrooms (I will be using regular white and baby bellas). When mushrooms are soft, add chicken broth (I got low sodium chicken broth in natural foods section). Simmer for 1 hour. Add salt and pepper to taste. I am hoping it tastes ok. When I used to make it, I added lots of brown rice when I added the broth, so it will be a little thin this way. Plan to seperate into 2 pots and put the brown rice in for slim DH.
