  • Vegetable needed!!!!

    I'm looking for a fairly low carb vegetable that gets crispy when cooked instead of soft.
    Any suggestions?

    Kale--if it's baked slowly or deep fried.
    Leeks---if it's baked slowly or deep fried.
    Fresh pumpkin---if it's sliced thinly and deep fried.
    Celeriac/celery root---if it's sliced thinly and deep fried.

      I fry egg plant. I cut them the size of french fries and then dip them in egg and bread with parmesian cheese then deep fry...if left in too long then they turn soft. But I find that they are pretty crunchy.

          There isn't one that will stay crispy as a crust for pizza. There used to be a recipe floating around the board called "bikergoddess pizza". That's a good faux-pizza recipe. Particularly if you bake the crust first (don't add the toppings) until the bottoms is crispy. Then when you bake the pizza, flip the crust over so that the crispy bottom is now the top. That will allow the un-crispy former top to crisp up and be more pizza-like rather than quiche-like.

                I use hamburger as a base for pizza. Just spread it out in a pizza pan like you would a hamburger patty. Cook until done, dran the grease off and top with toppings. Yummy.

                  This is the one I use http://genaw.com/lowcarb/deep_dish_pizza.html and it doesn't turn out deep dish for me ....I bake it on a stone with parchment paper, remove from stone and keep on paper and let it sit in the fridge for an hour or so while I'm browning meat and/chopping my veggies, then return it and paper to the stone and pop my sauce and toppings on and bake. We all love it. My family even requests it from time to time, and is the one thing I've continued to make low carb even when I went off plan! It doesn't use heavy cream and only half as many eggs as the other recipe link you posted. When it didn't turn out deep dish for me the first time, I thought I had done something wrong, but then I figured out that my stone isn't the equivalent of a 9x13!!!

                  p.s. I cut mine in squares and have even taken leftovers to work and can still hold it like a regular pizza shop square with no problems.

                    The reason I was looking for a veggie is that I'm trying to cut the fat; well, the calories, of the original. As an upteenth time arounder, calories seem to count a heck of a lot more than they did the first few times.

                      The only thing I can think of then would be a big ole portabello mushroom as a base with the sauce and toppings on top but it won't be crispy!

                        Ohhh Good idea, maybe I'll use dehydrated mushrooms, they ought to crisp up!
