  • Celery help

    I love chopped up celery in scrambled eggs. The trouble is I only use a few tablespoons a day. Even though celery lasts quite a while it still goes bad before I can use it all since that's pretty much all I use it for. I don't lke raw celery. Anyone have any ides what else I can use it for?

    Whenever I have a recipe for soup or stew, I use equal parts of celery and onion in place of the listed amount for the onion.

    Also when I roast a piece of meat, I put a mixture of celery and onion on the bottom of the pan. Put the meat on top and roast it. Then I puree the cooked celery and onion with the cooking juices, it makes a nice sauce/gravy for the meat. You can do the same thing for stews.

      I chop it up and put it in snack size ziploc baggies and toss it in the freezer. It doesn't look pretty when thawed, but should be fine for what you use it for-oh and it if bothers you to pop off a chunk to cook with, then you could freeze it on a cookie sheet before you put it in the baggie and that way you can pull out individual pieces.
