  • This sounds good, but what the heck...

    is "mortadella sausage?"


    Al Capone Roast

    When I was young, my mother used to buy cuts of meat at a
    butcher shop in the north end of Boston called Al Capone's.
    That night she would always make her Al Capone Roast. This
    is a variation of my mothers recipe. Have the butcher run
    the flank steak through the tenderizer. Prep Time: approx.
    15 Minutes. Cook Time: approx. 1 Hour . Ready in: approx.
    1 Hour 25 Minutes. Makes 6 servings.

    3 pounds flank steak, pounded
    thin for easy rolling
    1/4 cup olive oil
    1 (4 ounce) can finely
    chopped black olives (optional)
    1 cup minced fresh mushrooms (optional)
    8 slices prosciutto
    6 mortadella sausage
    10 slices mozzarella cheese
    10 slices pepperoni sausage
    1 tablespoon Italian
    seasoning, divided
    1 teaspoon garlic powder, or
    to taste
    1 teaspoon steak seasoning


    Directions
    1 Preheat the oven to 350 degrees F (175 degrees C).

    2 Rub the flank steak on both sides with olive oil.
    Sprinkle the mushrooms and olives over the steak, if using.
    Place a layer of prosciutto, then a layer of mortadella,
    mozzarella, and then pepperoni. Season with some of the Italian
    seasoning. Roll the steak up around the filling, and tie with
    butcher's string. Rub the outside of the roll with remaining
    Italian seasoning, garlic powder and steak seasoning.

    3 Heat a large cast iron skillet over high heat. Sear the
    roast over the entire outside. Then leave the roast in the
    skillet, and place the skillet in the oven.

    4 Roast for 1 hour in the preheated oven, or until the
    internal temperature reaches 160 degrees F (70 degrees C) when
    taken in the center of the roast. Let rest for 10 minutes
    before slicing and serving.

    "mortadella = mortadella bologna Pronunciation: more-tuh-DELL-uh Notes: This exquisite smoked pork sausage is similar to bologna, only it's flavored with garlic and has bits of fat and sometimes pistachios in it. It's a key ingredient in a muffaletta sandwich. Always serve it cold. Substitutes: bologna OR olive loaf"

    Sounds pretty nasty to me! I'm ok with bologna, but hate Olive loaf...maybe try capicola?

      Thanks Higgies. Now why didn't I think of doing a search? Duh! Hmm Bologna like huh? That explains why it said "6" of these insted of like 6 ounces or whatever. Capicola--isn't that kinda like salami? Sounds better to me anyway, I don't think I'd be able to find this mortadella stuff!

          Yeah, the description of mortadella does sound good, but Olive Loaf doesn't. I don't have a clue where you could find mortadella, so if you like Olive Loaf...

                  I love olives in almost any fashion but I am so with Higgies on this one ...I think it is a growing up in Rhode Island but if I opened my lunchbox as a kid and olive loaf was in there that was the end of lunch for me!!!!.....oh no.....we all hated olive loaf growing up...but olives any other way are one of my favorite foods...

                      The label on the pic Pau posted says "mortadella con aceitunas" or "mortadella with olives". There's a mortadella without olives and it looks sorta like bologna, but the taste is different---"spicier" if that makes sense...

                        Yes, there are a lot of "mortadelas" .... Italian, German and also Spanish. For me all of them taste like sausages and as you say... some of them "spicier" and other lighter!

                          Ok, ok! I wasn't trying to offend anyone...can't we all jut have our likes and dislikes?! LOL :P

                          I LOVE olives...I'll leave it at that, and a motadella without olives does sound delish!

                              LOL you guys! I LOVE olives too! But I also do not like them mixed in with chopped up meat! but the thought of a really spicy bologna type meat w/o the olives sounds yummy, I'll have to see if I can locate it around here! thanks for the input guys and the picture Pau!
