The only olive loaf I had as a child was something with olives, pimentos and MACARONI mixed in.
I've had mortadella, and it's good. I'm sure it would be great with the pistachios in it, too -maybe that was the white spots, but I thought they were pieces of fat. It's been a while since I had it, so my memory may be bad, but I'm pretty sure it didn't have olives in the piece I tried.
Of course, I rather like head cheese, too, so perhaps that's a standard that others may not like, either.
I don't eat very many processed meats anymore - not because of any particular reason - just because I've got so many other choices.
