  • Packing lunches for induction hubby

    I want to pack lunches for my DH on induction that he can take to work. Something I can prepare the night before would be great! He's getting a little bored with lettuce with meat and cheese on top. Any ideas to stave off boredom that packs well, even in a small cooler?

    tuna salad, chicken salad, both with lettuce as lettuce wraps

    left over casseroles to put in the microwave at work are great for me and are a real treat! (low carb of course!)

    salads with meat cheese olives veggies etc... and dressing on the side.

    baggies full of veggies to munch on at the desk when starving...

    cold chicken breast, canned green beans...

    just a few things I like.

      If he has the availability to use a microwave - anything! I cook alot over the weekends to I mix up the foods I eat for dinner and lunch (today for example I had lamb chop with brocolli & cheese) -- I much prefer bringing my lunch then eating out (I am a better cook than most restaurants ) If it needs to be cold - Atkins friendly "Fried Chicken" -- made with crushed pork rinds (or any other cold chicken [I actually prefer to eat my chicken cold]... I am sure there are plenty of other ideas out there

        I make baggies of veggies for snacks like: Jacima sticks with a splash of lime and salt, snow peas, cucumber slices etc. Then I'll pack cheese or cut up sausage that's been cooked. For lunch, I am pretty tired of salad so I'll bring stuff I can microwave or Romain lettuce roll ups with roasted peppers, meats etc. One thing that helps me is that I use a lot of different kinds of cheese and meats so it doesn't get boring. Comte or blue cheese used for the filling of an inside out burger is good. Buffalo instead of beef. Smoked salmon is great with cream cheese inside a lettuce wrap or on "cucumber chips" Hope that helps.
