I've heard so many good things abot roasted veggies but I don't get it. Maybe I'm doing it wrong. I made cauliflower and cabbage last night and all they did was burn. Don't taste like they cooked at all. I don't like most raw veggies. Is this what they're suppose to do? I just cut them pretty small and tossed with olive oil and baked on a cookie sheet for about 15 minutes 400 degrees (until I saw they were starting to burn). Did I not do it right

try turning the heat down and the time increased. say 300-325 for 25-35 minutes. Try putting the veggies closer together and the moisture coming off the others around them will help steam/cook the ones its around. Maybe cook them in a covered dish for a bit and then for the last 10mins let them cook uncovered at 400.

I'm not sure how well cabbage will roast with cauliflower because of the difference in thickness etc? I've never heard of roasting cabbage actually...
My favourite veggie roast is: red, green, yello peppers, zucchini, onion, all cut up in 1-2" chunks (try to keep size consisten), tossed in olive oil and then roast, turning a couple of times during cooking. This works really well on the bbq too.Jen, 39, F

certain veges roast better than others. I wouldnt even try roasting leafy veges as they will just frizzle to a crisp. Root veges , peppers, onions, pumpkin etc all work well and taste terrific - drizzle with olive oil before you pop them in the oven!Donna

When I roast veggies, I put them in a ceramic bowl in the oven for about 40-45 mins.
You need to choose your veg wisely for this. Red onions (cut into chunky quarts), zucchini, egg plant and peppers work well. If your not low carbing then parsnips and sweet potato also work well.
Drizzle some olive oil over it and mix, making sure the veg is all coated, add some garlic for taste. Sometime I like to sprinkle paprika on it too for a mediterranean taste.
In the last 10 mins add some mushrooms and grated cheese or mozzarella on top.

Another trick is to use italian salad dressing rather than straight olive oil...it seasons the vegs at the same time
