  • Pina colada dessert anyone?

    I had a brainwave of sorts in the supermarket the other day . I was looking at a can of coconut cream and checking out the carb content ( as we atkineers do ) and suddenly thought of pina coladas! So I got a diet pineapple jelly and added one cup of hot water to dissolve it , and one cup of coconut cream. I poured it into dishes and as it set it sort of separates into a nice rich pinecolada jelly with a layer of clearish jelly underneath. then I thought if it was a little bit firmer it could be turned out so that the clear jelly was on the top and it would look pretty good with a nice strawberry and cream garnish. Next time I will try adding only a half cup of hot water to dissolve the jelly( jello for the american people!) and also add a half cup of cream .... yum.
    I have made lots of lovely desserts by experimenting with jelly and cream , cream cheese and berries etc. be sure that you are on the correct rung of OWL for the ingredients you use though!

    Unfortunately, they don't sell pineapple flavored diet jello/jelly here in the states. We could make jello from scratch though using unflavored gelatin and some pineapple Da Vinci syrup.

      I can't find cream of coconut that isn't sweetened either. Is there a brand anme anyone knows of?
