Okay so I'm making this for dinner tonight. I found a sauerkraut that has no sugar added and has 1 carb for 2 tablespoons. What do you think? I know the salt content is pretty high in it and I know the nutrients in it are not as great as my green leafy vegetables but when i cook the pork in the kraut the pork retains the flavor and I could pull it apart with a fork. I probably won't eat much if any of the kraut and opt for a green vegetable. Anyway I just wondered what everyone thought.

Sauerkraut is one of my favorites!!! Per the DANDR it os on the "Other Vegetable" list. You are allowed 1 cup as long as you don't exceed 2 cups for the "Salad Vegetable" list.

I lived in Germany for 9 months. I know that kraut is made out of cabbage, thank you. I just think that compared to fresh/frozen spinach or broccoli it is not as good of a vegetable choice.31/F/5'7"

Actually, sauerkraut is very nutritious----provided you get "real" sauerkraut. By real, I mean the kind that has really been fermented, not the kind that is just lightly pickled in vinegar. Real, fermented sauerkraut contains lactobacillus---the "good" bacteria that promotes intestinal health.
It's really easy to make (I have a jar of homemade kraut in the fridge.)~Megs~
