I may have missed this thread but I just got a Chili Grill off Ebay. I think the Chili Grills are a must for anyone who loves to make the pepper poppers.
On the web site that sells the Chili grills with the 1 inch holes that hold the pepper for either on the grill or oven, they have a host of jalapeno recipes and I wanted to share. And see if anyone else had some.
Here's a couple that I think look good.
Buffalo Chicken Stuffed JalapeƱos
1 can (about 10-12 oz.) of cooked chicken, drained well and finely flaked
6 ounces cream cheese
1/4 cup Louisiana hot sauce
1/4 cup bottled ranch dressing (or bleu cheese dressing)
1/2 cup shredded cheddar cheese
TOPPING: 1/2 cup shredded cheddar cheese (optional)
Poke a small hole in the bottom of each jalapeƱo. (If you are used to seasoning the inside of your peppers with salt or Creole seasoning... don't do it in this recipe) Cream the cream cheese, hot sauce and dressing. Add the chicken and cheese and mix well. Pipe into peppers and grill. If desired, just before taking off of grill... top with a little sprinkle of shredded cheddar cheese... and let melt.

Meat Jalapenos
Put your choice of raw meat in the jalapeno. Be sure and poke a hole in the bottom of the jalapeno to let it drain while it cooks.
